Happy Mom’s Day One Day Early!

The Royal Mom actually contributed to today’s menu by giving me the recipe we’re going to do today.    I didn’t get her to help out because it’s Mom’s Day weekend and she deserves a break as do all Moms.     This recipe has all the stuff my Mom loves in it – bacon, honey, cream cheese, beautiful fluffy bakery croissants, and blueberries.   This is a great “special occasion” kind of breakfast treat but actually – isn’t EVERY day special when you’re having bacon??????

The Royal Mom and I also want to thank all of you who knew May 10th was our 13th blogaversary.   Mom and Angel Sammy started the blog in 2011 and when Sammy went to the Bridge I took over his regular spots including Bakin’ With Bacon.    BIG HUGS……………..

 

Blueberry-Bacon Croissants

 

INGREDIENTS

  • 8 ounces cream cheese softened to room temperature
  • 2 tablespoons honey
  • 2 slices fully-cooked crispy bacon chopped
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon freshly-grated ground nutmeg
  • 2 tablespoons unsalted butter
  • 4 store-bought croissants cut in half lengthwise
  • 1 cup of blueberries
  • softened butter and 100% pure maple syrup for serving

DIRECTIONS

  • In a medium bowl, mix together the cream cheese and honey. Gently fold in the bacon and set aside.
  • In a large shallow bowl, whisk together the heavy cream, milk, eggs, vanilla extract, cinnamon and ground nutmeg. Set aside.
  • Melt the butter in a large nonstick skillet over medium heat. Taking each croissant half, dip it fully into the egg mixture, making sure to coat each side. Carefully add it to the hot pan. Repeat 2-3 times depending on how large your skillet is. Try not to overcrowd the pan. Cook for 2 minutes on each side, or until browned to your liking. Repeat for the rest of your croissant halves.
  • Spread the the bacon-cream cheese mixture onto 4 of the croissant halves and place a handful of blueberries on top. Place the remaining 4 croissant halves on top. Garnish with additional blueberries and serve with butter and/or 100% maple syrup if desired. Enjoy immediately!

 

Would it be wrong to make a bigger batch of these and have TWO?   Of course not.   After all – this is just too yummy to stop at one!   Before I go, I want to wish everyone – especially Moms – a wonderful day tomorrow…………….!!

  3. Teddy, my mom said she would just skip the croissants and go straight to getting a big tablespoon and scooping up the filling into her mouf untill is all gone. Y-U-M!!!!

    Well done letting Mom gets much credit on Mother’s Day weekend. Even kings can be humble once in a while. Blueberries are far from my favorite fruit, but I might even try this one if it came from the Royal Kitchen. Congratulations on 13 years!

  5. Oooh, Teddy, now that’s another great, calorie-laden recipe, that our mom says she could really sink her teeth into. She wishes she had the ingredients and could get our dad to make it tomorrow.   6. Whoa, that’s a very good recipe, yes, it would be worth making a whole batch to share with everyone in the house, they’d all want some, after all.
