Bakin’ With The King and Turkey Leftovers!

Turkey Leftovers?  Yeah – why not?  

 

What to do with all that turkey? Well here’s a really NICE (and different) way to use some of it!   I found this recipe and we tried it here in the Castle and it had a FIVE out of FIVE STAR RATING!   I think if WE liked it, maybe YOU would too??????    Nice and cool and refreshing and a great combination of the tastes some of us experienced with our Thanksgiving dinners but in a whole different way than the usual casserole most of us come up with.

 

Apple Cranberry Turkey Salad

INGREDIENTS:

  • 3 cups cooked shredded turkey
  • 3/4 cup chopped pecans
  • 2 celery stalks, diced
  • 1 cup dried cranberries
  • 1 cup diced apple chunks
  • 1/2 cup plain greek yogurt
  • 1/2 cup mayonnaise
     
  • 1/2 cup fresh finely diced parsley
  • salt and pepper to taste
  • Dinner rolls

****I know this recipe has no bacon in it – but quite honestly – it just might be an interesting little ZIP to crumble up a few slices of cooked bacon in the mix!

DIRECTIONS:

  1. Combine everything together in a large bowl. Stir until mixed thoroughly.
  2. Refrigerate for a few hours so the flavors have time to blend.
  3. Serve the salad on the dinner rolls. Keep refrigerated.

No doubt about it!

In the coming weeks as we approach Christmas – I’ll be sharing some Christmas recipes most of which will have bacon in them – after all, the King of Bacon should try and feature bacon – am I right?

  1. Well, THAT is a lovely way to have the leftovers! And good to use yogurt to cut the mayo quantity, a great idea. If only we had leftover turkey! This year mama and papa had confit of duck, and there are no leftovers of that, believe you me. But I think we can do this with chicken, too, although mama LOVED having turkey soup afterwards….

    • Confit of duck – yum…..and I should imagine this delicious salad (which Mom and Dad had for dinner last night!) would work just as nicely with chicken!! Mom has turkey soup on the agenda for Sunday dinner. WE LOVE LEFTOVERS!!!!!!

  2. Our leftovers are no longer left over after last night! Just enough potatoes for potato cakes tomorrow morning. Love the idea these little sandwiches are eaten on dinner rolls. We didn’t have turkey but this recipe would be delicious using a rotisserie chicken when we are hungry for chicken salad (one of us does not like turkey… what’s with that?) and that happens pretty often. I would for sure crumble some bacon and add it.

  3. I make something similar with chicken. When I don’t have cranberries (which is most of the year), I’ll add grapes cut in half or any other dried fruit. It gives it that slight touch of sweet but not too much.

  4. Mom always puts cranberries and apples into my (her) chicken salad, so this makes sense. And of course, bacon makes everything better! So yeah. Two paws up!

  5. Oh my CATS! The Can Opener of going to try it today ! And you know, you can always add bacon bits to the top of it!

    Since you love bacon-(who doesn’t)- see my post about Thanksgiving- my humans used a video recipe (link in my post) by Chef Gordon Ramsay and it doesn’t say anything about bacon in the title- but the Turkey is roasted with bacon- SOOOOOO GOOD!
