WHAT????? Is it April Fools Day????????????? Well, yes it is but that’s not why we’re here posting TWO blogs in one day. We’re here because our buddies and pals at Canadian Cats and Easyweimaraner (Shoko and Tyebe and our friends Phenny and Nelly in Brittany) have started a NEW monthly blog posting Hop with a recipe exchange! You can join the hop at either of their blogs – just click the links and voila – get cookin’ !
Sharing a recipe – which I have tons of because I already host a Saturday BACON Recipe post…………………BUTTTTT I’ll try not to make it all about bacon and save that for Saturdays.
Mostly I’m going to go for EASY……………EASY to make stuff is my specialty. Ready? How about a SUPER SIMPLE chocolate cake?
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 1/2 cup baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs, room temperature, lightly beaten
- 1 cup canola or vegetable oil
- 1 cup buttermilk
- 1 cup hot water
- Frosting of your choice (already made stuff is fine!)
- Colored sprinkles, optional but cute……..
Directions
- Preheat oven to 350°. Grease a 13×9 inch baking pan. In a large bowl, whisk the first 6 ingredients. Stir in eggs, oil and buttermilk. Add water; stir until combined.
- Transfer batter to prepared pan. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack. Frost cake. If desired, decorate with sprinkles (they are cute!)
SEE? I told you it would be easy………….there you have it. Now make it so you can EAT it!

It certainly seems easy! We are always ready to try a chocolate cake. I am not a baker but SSNS would take this on. I think I would need a 13×9 inch baking pan. Lots of things didn’t make the move with us! With chocolate cake, often we don’t even bother with icing.

I’m with you on the icing thing………but if I did ice it I would use the “off the shelf stuff” in a can because it’s DELISH!!!! Two blogs from us in one day. WOW. 🙂

I don’t drink buttermilk so I’d have to pour out what isn’t used. Can it take regular milk?

YES INDEED! Regular works – buttermilk somehow seems richer but doesn’t matter which you use !

My mother made this one but the hot water was hot coffee and there were 2 tsps of baking powder. It’s was always a very moist cake. She had a small bundt and then she didn’t ice it. If she did it in a rectangle there would be a thin layer of icing because you really don’t need it except it looks pretty.

Oh hot coffee is a good idea! I agree about icing – with a chocolate cake it’s definitely optional stuff……..pretty but optional…….. 🙂

Sometimes she’s use a thin glaze if we were getting company but not too much. The cake was the star not the icing.

Can’t go wrong with a super simple chocolate cake! Yum! Mom and I have never met a food that didn’t get better with some rainbow sprinkles! Good call.

Yummy 😋 I drink a glass of buttermilk every morning so I have it on hand. I haven’t made a cake in years. I might need frosting.

It’s just as tasty without frosting………! If you have any bakers chocolate or chocolate candy you could melt you could make some quickie frosting in a pinch but it’s not necessary – it’s a tasty little cake!

Sounds yummy. Here favorite recipe is an easy one and anything chocolate is always good. Mom hopes we can join the hop next time. She’s been helping Mom Jean get the hop part set up. You can’t go wrong with chocolate cake, Teddy. I should have all those ingredients apart from sprinkles, but I do have little chocolate chips sitting in the fridge waiting to be used! I am not an icing fan either, but apart from that I am good to go. I have been doing lots of baking since we have been on lock down and made raspberry and apple sponge pudding today.

Would this recipe work for a layer cake? Or does it have to be doubled? Of course my human has to be difficult.

It makes a pretty small cake…..so doubling would be best if doing a couple of layers!
