Welcome to the Castle Kitchen – it’s “Cooking With King Teddy” day!
We have a recipe that might have you scratching your head and saying “not sure this sounds good” but you know me – I wouldn’t lead you astray – and if you like pizza and chicken and BBQ and most of all BACON, just THINK about making this one OK?
BBQ Chicken Pizza
I can hear you now…………….”What??? No bacon???” but it’s there – just keep reading!!
Ingredients
- 2 tablespoons olive oil
- 1 medium red onion, sliced
- 1 tube (13.8 ounces) refrigerated pizza crust
- 3/4 cup barbecue sauce
- 2 cups shredded cooked chicken breast (you can buy already cooked chicken at most groceries if you don’t want to do your own!)
- 6 bacon strips, cooked and crumbled (six strips in the official recipe but you know me – more if you want it!!)
- 1/4 cup crumbled Gorgonzola cheese (probably other cheese will work but gorgonzola is really tasty)
- 2 jalapeno peppers, seeded and minced
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 cups shredded mozzarella cheese
See? I didn’t lead you astray and I have to admit, while my Mom has NEVER EVER had pizza with chicken (I know – I hear you – it’s way better for you than meat) she thought this was really delicious – partly because of the BBQ sauce but also because of the BACON!!!
Now get to baking – this is too good NOT to make ——– occasion or no occasion. Ya gotta eat right? Then give this a try!

I think the times are going to be more thick than thin if there’s lots of bacon involved…

Hi Teddy! I’m sorry but I think this is one I won’t be trying. It mostly sounds delicious but I really dislike BBQ sauce. I will probably experiment at some time with different sauces though, maybe cheese or tomato salsa. I usually save your recipes in my “Teddy’s Bacon Recipes” file.

Oh how cool you have a special file for my recipes! Sorry this one doesn’t take your fancy BUT I know BBQ sauce is one of those “iffy” tastes. I think this probably is good WITHOUT any sauce too but the BBQ sauce (my Mom likes sweet BBQ) was tasty.

Oh I’m so sorry that your PA got poorly but I do hope she’s feeling better now?? With all of you taking care of her SURELY she’s on the “RECOVERED” list??!! Thanks for trying to come by for the Teaser – you know it’s always posted at a surprise time so I guess we just missed you – a lot of our “not in the USA” friends NEVER are there to be First Commenters but often they know where the photo was from and they are FIRST RIGHT GUESSERS! You will be one of these days I just KNOW IT!

Oh yes – remember recipes are “suggestions” and you can substitute stuff pretty easily in most recipes. Just like the hot peppers – you can leave those off and it’s just as yummy!!!!!

Oh Sundae lots of peeps AND kitties (and dogs too) don’t care for bacon….I only eat a tiny corner of a piece of bacon because it’s salty and just enough for me but Mom and Dad love bacon so they use it a lot in things they cook.

THey really aren’t necessary in this recipe – we aren’t fans of HOT HOT HOT either so I used VERY LITTLE.

Before I was a vegetarian, I loved BBQ chicken pizza. I’m sure there’s a good vegetarian version out there somewhere.

I think veggie pizza is fabulous – every vegetable you can think of loaded on pizza and grilled nice and melty. YUMMMMM! Good without chicken!

My Mom wasn’t sure about it either but it was SURPRISINGLY good – might have been because of the BBQ sauce and bacon and cheese….the chicken was just “icing on the cake” (well…you know what I mean!).

Mom has had bar-b-qued chicken pizza a couple of times, and she says it is yummers. It did not have bacon however. That could only make it way better. I actually DID go outside once – this morning around 10-ish – and it wasn’t snowing but it was COLD COLD COLD. Mom was with me and she sat on one of the porch rockers and I kind of scrunched down in my “conserving heat” position and sat there just looking around for ten minutes. Then I told her it was time for us to go inside. She looked grateful….so was I !!!

Indeed………..and we loved it here – I got to have a tiny bit of chicken AND a tiny bit of bacon and let my Mom and Dad eat all the rest – – and they had no trouble doing that I might add!
