Bakin’ In The Castle Kitchen with ME and The Royal Mom Today!
Why is she with me today – well, to tell you the truth, she is as much of a bacon lover as I am and as Angel Sammy was and as my Dad is……….we are a BACON FAMILY. So when I said I wanted a bacon recipe to share she suggested this and boy am I glad she did – it’s one of those soups that you either HAVE had or WANTED to have. I guarantee you that if you love bacon. It’s relatively simple too – you can adjust it as you want to because my recipe and instructions are just my SUGGESTION – feel free to improvise! But one thing is for certain – you’re gonna LOVE THIS SOUP!
Creamy Potato Bacon Soup
Ingredients
8 slices bacon – chopped
1/2 onion diced (sweet onion is the best but any onion works great!
2 cloves minced garlic
2 ribs of celery diced
3 cup low sodium chicken broth
15 ounces baking potatoes peeled and diced to 1/2 inch size (about 2 medium potatoes)
1/4 teaspoon dried thyme
1 cup heavy cream
1 tablespoon cornstarch
salt and pepper to taste
pinch of cayenne pepper (if you want a bit of zip)
GARNISH SUGGESTIONS: Parmesan cheese and sliced green onions
DIRECTIONS

Cook bacon in a large saucepan over medium heat until crisp. Remove with a slotted spoon and set aside.

Add onion, garlic, and celery to the bacon fat and cook 3-4 minutes or until onion softens slightly.

Stir in chicken broth, potatoes, and thyme. Bring to a boil, reduce heat to a simmer and cook covered 10 minutes or until potatoes are tender. Stir in cream and simmer for 5 minutes longer.

Combine cornstarch and 1 tablespoon of water to create a slurry. Whisk into the simmering soup and simmer 1 minute. Stir in half of the bacon. Season with salt, pepper, and cayenne to taste.

Spoon into bowls, top with parmesan cheese, remaining bacon and green onions.

I keep a close watch on the Royal Mom – we have an understanding – Saturday is THE KING’S DAY – she is merely helping me with BASIC stuff – I’m LARGE (!) and IN CHARGE! 🙂

We ate a bacon potato soup at Silver Spoon when we lived in Virginia and this sounds pretty darn close to it. I don’t think they served it with parm but green onions for sure. I am always looking to find that soup so will be trying this out to see! You can’t go wrong with potato soup with BACON! Teddy, good to see The Royal Mom in the kitchen with you!!! We had so many great resaturants around D.C.

Yes you’re right – there are a lot of great restaurants around here and Northern Virginia also has their share – our little town is limited but the ones we DO have here are SUPER GOOD. I’m glad this recipe sounds close to your Silver Spoon version…..and quite honestly (for me) any potato soup is yummy. I just love the taste and the texture and with onions and bacon I can’t imagine ANYBODY hating it! LOL

Deglazing the bacon pan with the veggies you will put in the dish is the best way to make sure you get all that bacon goodness in the final product. This sounds great.
