Welcome to Castle Baconia – I have SammyP from 15andMeowing helping today!
The reason we’ve asked our buddy and pal SammyP to join us is that HE and his Mom sent in a fabulous recipe that we’re passing on today and he said he’d help me make this while we share the recipe with you.
Ready? This recipe is SOOOOOOOOOOOOOO delicious and SammyP says his Mom Miss Ellen makes it at home and they LOVE it.
Miss Ellen’s Bacon Zucchini Quiche
This is easy to make and ever so delicious and yummy to eat!
INGREDIENTS
4 cups shredded zucchini
3 eggs
1/2 cup vegetable oil
1/2 cup grated parmesan
1 small onion – grated
3 strips of bacon – cooked and crumbled
1-1/2 teaspoons baking powder
1 cup flour
DIRECTIONS
Combine all ingredients and place in a greased pie pan at 350 degrees for 45 minutes!
Next week I’ll have another exciting (hopefully) and delicious (hopefully) baconized recipe for you to try. Can’t get enough bacon – no such thing am I right? OF COURSE I AM – I’M THE KING! Easy enough to maybe make later…we just got back form DC! Good safe driving both ways…but a LONG trip…gotta refill the larder and the fridge first though, LOL!

I wish I was at a furriend’s home where this dish is being made so I could try it. Mom and I are hesitant about squash but we would be willing to try some.

Atta girl…..you might find that you like it! My Mom’s fave is yellow squash sauteed in butter with sliced up vidalia/sweet onions. MMMMM…..zucchini is also delicious!

Thanks Miss Pix! It’s too good NOT to try isn’t it. Just cook it longer than it originally said – made a mistake posting – said 34 minutes in the oven but should be 45 minutes (at least!).

ATTENTION ALL QUICHE FANS! The baking time for this FABULOUS dish should be 45 minutes not 34 – my typist made an error. EEEK! You may need to bake it longer depending on your oven………just check it at 45 minutes.

Glad you got the notice of post!! No worries – lots of people don’t like ANY kind of squash! We have a “medium” weekend ahead with high 70s and low 80s – BEARABLE!

Sounds terrific, Sammy P. We love zucchinithere is not much flavour to zukes so I can’t figure out how one can dislike them but maybe its the texture. We also add zukes to spagetti sauce sometimes…very tasty.

We make a Bacon and Zucchini Frittata that is just about the same. We love it because it makes a terrific lunch the next day and your can eat it cold or hot.
