It is your King! With another bacon recipe you’re going to love!
But today I’m not “baking” I’m just “making”. It’s a salad………..with two of our favorite things in the castle: avocados and bacon. Ready?
Bacon Avocado Salad
Ingredients
- 3/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 4 teaspoons sugar
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon Dijon mustard
- SALAD:
- 1 bunch romaine, chopped (about 12 cups)
- 3/4 pound bacon strips, cooked and crumbled
- 3 medium tomatoes, chopped
- 1 medium red onion, halved and thinly sliced
- 3 medium ripe avocados, peeled and cubed
- 2 tablespoons lemon juice
- 1 cup crumbled Gorgonzola or feta cheese
Directions
- Place first 6 ingredients in a jar with a tight-fitting lid; shake well until blended. Refrigerate until serving.
- In a large bowl, combine romaine, bacon, tomatoes and onion. Toss avocados with lemon juice and add to salad. Sprinkle with cheese. Serve with dressing, shaking the jar to blend again if needed.
Holy Cow………………..my Mom – oops I mean THE ROYAL MOM – loves this salad. She’s always loved avocados and in fact often she’ll start an avocado plant from the seed – we have two four foot avocado plants in our kitchen right now in fact. She can eat an avocado just like it was an apple or some other snack. Anyway, if you like avocados I can guarantee you’ll love this salad.
It’s easy to grow your own plant by the way…………………Mom moves her avocados to the back deck in the summer – sure they won’t ever have avocados probably because we don’t have the right weather BUT they are pretty plants on their own……………….
In some parts of the country you might just grow actual avocados but not where we live – still the plants are fun to grow – kids love to watch this process but so do adults (especially THE ROYAL MOM!!!!!).
Oh, Wow, sub out the sugar, and that recipe would for sure fit into our dietary ways!
Maybe not yet for me, though…not till sometime in August…a yummy thing to look forward to. I should try to grow an avocado seed sometime.

Growing an avocado is SO MUCH FUN. You just have to be very patient because sometimes it takes quite a while for that sprout to happen! Fascinating to watch though. It’s a VERY delicious salad too!

Oh I think bacon is definitely one of the “purrrfect foods” for us and for our human pets. My Mom is an avocado crazy lady so this recipe is purrrfection!!!!!!

I love avocados! I have grown them from the stone but they usually die after they reach about 2 feet. Maybe because I didn’t take the top leaves out, but more likely our climate.

Hi Jackie……you know I’ve never taken the top leaves out but I understand why my plants are always one long stalk – pinching forces them to branch out a bit. Anyway, I just love watching the whole process from seed in water to plant. Fascinating!!

I am a lover of avocados too! I like to slice them in half, whack the seed with the knife and remove the seed and then eat them with a spoon right out of their avocado jacket. This salad sounds absolutely delicious and cool and fresh for summer lunch. To Publix I will go after I make a list!

I do that too (remove seed and eat the avocado right out of the skin – it’s like a perfect “plate” !!). We always have at least two on hand – I admit to being an avocado-a-holic!

You about need to grow the bacons again as well when you make these recipes. I think you must have had a great crop of bacon this year. I remember helping by working in the greenhouse a few years ago along with other kitties and woofies helping you.

Angel Sammy was a great one for having a harvest party to “bring in the catnip” every year. Gosh I miss him……… Bacon is a “staple” around my house though – and Mom makes it often. Truth be told I only eat a “little fingernail sized” piece of bacon – that’s enough for me – just a taste. Mom and Dad love it probably more than they should!

I printed the recipe and will submit it to the wife for approval. The only issue I see is the cooking of the bacon. Our house was deep cleaned yesterday and my wife, for some unknown reason, thinks I make a mess in the kitchen. I don’t. Really. 🙂

Yeah sure……my Dad says that too but he really does make a mess – Mom says it’s almost not worth it having to clean up after Dad even though she didn’t make the meal. Best way to avoid making a mess with bacon is to do it in the microwave (hint hint).

It is fun – we’ve never had a plant bear fruit either but in warm climates they do – not in Virginia OR where you are though! Unless we had a greenhouse! 🙂

You can’t go wrong with a salad in the summer and bacon just makes it better. It’s like a hamburger. Plain (with tomato and lettuce) is good but put a piece of bacon on it and it’s over the top!

Oh yes! A bacon burger or bacon cheeseburger is PERFECTION. My Mom has been a burger fan for years.

So fun, growing an avocado tree. Mom is not a huge fan of eating them, but if she were still a teacher, they’d be growing in her classroom and at the homes of all the kids in her class.

My Mom never ate them until she got all grown up – her Mom loved them so she was “around” them but wouldn’t eat or even try them. Now she buys them every week at the grocery so she has them “handy” !!

Mom and Alex had a similar salad last night, but they had chicken (instead of bacon). Mom loves avocados too. He Mom used to grow the plants from the seeds. They made terrific house plants. But in all the years, only one ever had a fruit. She could grow anything (she even had a lemon and orange tree she grew from seeds).

OMC, Teddy, our mom loves avocados and Gorgonzola cheese, so we know she is going to make this recipe…without the red onion, of course, as that will not agree with her. How do you get the toothpicks into the avocado 🥑 pit? I have tried it and the outer shell is too hard. I resorted to putting one in a shot glass with only the bottom half submerged in water, but nothing happened. Maybe I didn’t change the water often enough. They would grow down here in my climate.

You need SUPER SHARP toothpicks and be patient when you EASE them into the sides of your it…..I agree it’s not easy but if you go SLOW and push hard they will go in. Also it takes QUITE A WHILE before the root comes out of the bottom and the seed cracks open to let the little plant poke its’ head out of the top. Also be sure you have the right END of the avocado in the water. Try it again…..and good luck.

Our Mom is all about salads – she just loves a good salad. This recipe has so many things she loves in her salad, but she just can’t get her mind around avocados. We think she just doesn’t like the way guacamole looks, but she says she isn’t sure about that. Maybe one day she will get brave and try it this way.

Big difference between guacamole (which has other stuff in it) and a slice of actual avocado with a touch of salt on it. One of my Mom’s fave snacks in fact. BUT my Mom wasn’t always a fan. She just thought it was a weird thing to eat PERIOD but once she tried it, she’s been an avocado-a-holic! HAHA

It is delicious and anything involving bacon I’m all for! I’m an only cat and at 25 lbs. way too big to hop on a counter…in fact I’ve never been on one but Mom has a spot in the kitchen window where she grows her avocado seeds that I’d have to “fly” to in order to have a peek….Kittens would make it a challenge to try and grow anything that’s for sure!

Yum! Avocados…a super tasty treat for salads (and so many other recipes). I’ve never had good luck getting the seeds to sprout, but that’s never stopped me from trying. I mean, it’s a great excuse for buying more avocados. 😇

Yes it is a great excuse and every time I say “I won’t bother trying to grow another plant” I think “oh it looks like the perfect seed to grow”….and here I go again! I think a lot of people start the seeds and get frustrated when it doesn’t sprout in a week or so – sometimes it takes a VERY LONG TIME for it to sprout but it’s so exciting when it finally does.
