Bakin’ With Bacon and King Teddy

BOO!   We’re sneaking up on Halloween……are you ready?

Well today I’m veering off-course because I want to share a Halloween treat (or really an ANY TIME treat) that doesn’t have bacon as an ingredient. Yes I know I don’t often do that but this is so delicious and perfect for Fall or Halloween or even the entire HOLIDAY season that I wanted to share.

Mom actually found this recipe while looking for a simple but “slightly different” pumpkin pie type dessert.    Know what?   It was super delish so I suggested we share it with you.

Easy Pumpkin Cake

Ingredients:

  • 1 (12 oz) can evaporated milk
  • 1 (15 oz) can pumpkin puree
  • 3 large eggs
  • 1 cup sugar
  • 4 teaspoons pumpkin pie spice
  • 1 package yellow cake mix   (reserve some of the mix for topping!)
  • 3/4 cup butter – melted
  • 1-1/2 cups chopped walnuts

Directions:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.

  • In a large bowl, combine pumpkin, milk, eggs, sugar and spice. Mix well, and pour into a 9×13 inch pan.

  • Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts.

Bake at 350 degrees F (175 degrees C) for 1 hour or until a knife inserted near the center comes out clean.

Doesn’t that sound good???

  1. Mm mm! Pumpkin!
    Now that is actually not what I have in my recipe collection(s)…but you got me wanting to hunt out my paleo/keto pumpkin recipes, MOL!

    You could add bacon to the plates on the side, than it would be a yummy lunch/brunch….gotta have me some bacon!
    It seems to be a sort of dump cake, those are always yummy!

  2. Dad says that sounds soooooo good. He loves pumpkin anything. Eons ago he used to work at a little bakery/deli/cafe/caterer up near the Yankee Candle flagship store in South Deerfield, MA where one of the most popular bakery items was a delicious pumpkin-apple bread. So moist and tasty, especially when fresh from the oven. Thanks for sharing this recipe!

    • Golly gee – pumpkin-apple bread sounds REALLY delish! My Mom loves almost everything pumpkin-ish……and goodies made in a bakery are twice as wonderful as “store bought” stuff (even though it’s made in a bakery too). Our grocery has a pretty good bakery section but it’s not QUITE the same as fresh from a bakery/deli/cafe OR homemade!!!!!

  3. I am going to buy the ingredients for this today or tomorrow! I agree with the Meezer’sMews&TerrieristicalWoofs… bacon on the side or as you say crumbled on top!
    I want it for breakfast right now! If we ever get back to the old days and we have our neighborhood breakfast gathering, this would be a great cake to take!

    • It’s a “different” sort of recipe – not weird – just different and it is SO delicious. I really think crumbled bacon on top would be great….not a whole lot but enough to give it a little ZIP!!!!

  5. OMC…THIS SOUNDS Delicious. MOM THOUGHT SHE WOULD JUMP UP AND MAKE THIS RIGHT NOW, UNTIL SHE GOT DOWN TO THE YELLOW CAKE MIX, WHICH SHE DOESN’t have in the cupboard. She’s putting it on Dad’s grocery list. Bet you could put bacon in the streusel topping. Sorry for the crazy mix of caps and lowercase.
