What do I have for you today? Well it’s a soup – and yes our soup season (winter) might be over but there are always evenings ANY season when you just want a nice grilled cheese sandwich (or something similar) and a bowl of homemade soup. This fits the bill…………and it’s also VERY yummy.
Bacon, Potato, Cheddar Soup
How to Make It
Cook the bacon in a large pot or Dutch oven over medium heat until crisp, stirring occasionally, 12 to 14 minutes. Transfer to a plate. Pour out all but 2 tablespoons of the fat from the pot; reserve the pot.
Add the onion and garlic to the reserved pot. Cook, stirring frequently, until softened, 6 to 8 minutes.
Add the potatoes, bouillon, milk (or half and half), 1 teaspoon salt, 2 tablespoons butter and ¼ teaspoon pepper and bring to a boil. Reduce heat, add frozen corn, and simmer, stirring occasionally, until the potatoes are very soft (almost falling apart) and the soup is slightly thickened, 30 to 40 minutes.
Serve warm topped with the Cheddar, chives, and reserved bacon.
So what do you think of this one? It’s got it all right? Those of you who can’t have bacon probably have figured out that with this list of goodies, the bacon COULD be left out and it would still be “finger-lickin'” good! Bacon does add a lot but hey……we can’t always have everything right?

Wonder what the shops will have to offer us, if we went on a hunt for the ingredients…the other day there was not a potato in sight. Not much bacon either. Seems the lack of ability to go to restaurants has everyone stocking up on things to cook!

No potatoes? Well I’m finding it interesting what people are saying their stores are routinely out of now…….Ours had NO tomatoes. Plenty of potatoes though! LOL

I make a lot of soup and this sounds very tasty. I would have to substitute chopped chicken for the bacon. We are having roast chicken tomorrow so I will keep some back for the soup.

Adds a little “sweet” !!! It really is tasty……..I did it with half and half which added a bit of sweet too but also added a LOT of richness. MMMMMMMMMMMMMMM BOY!

That looks delicious. I bought bacon yesterday but it is reserved for BLTs this morning. That is what my wife gets for breakfast when we go out but since all eat in restaurants have been closed in Florida as of yesterday, I decided to make her breakfast.

Sounds delicious! Purrhaps I shall have my staff make it, tomorrow… Today they are busy purrocessing about 10 gallons of loquats for the freezer. Of course, I am snoopervising to make sure no pits make it in… Lots of things can be done with the frozen halves, but this afternoon, when the first are frozen, I plan to have the staff run 3.5 to 4 cups through the food processor with some sugar and lemon juice, then put it in the ice cream maker to make sorbet.

Yes in fact the corn addition was a suggestion of someone else who added it and found it to be a wonderful “touch of sweet”. BUT as always, recipes are guidelines and can be adjusted to taste. I’m sure paprika would be fab as would any number of other additions. GO FOR IT! It’s just a nice hearty comfort soup.
