Hello friends………….I had so much fun making that easy peasy simple snack for you last week that I thought I’d do another easy peasy simple snack for you today! My Mom is a sucker for crostini with almost anything on it and this is – well – almost sinfully delicious. You’ve GOTTA try it!
Ah My King! I shall prepare this for you and your Royal guests at your next Castle Cocktail Party!
Almond Bacon Cheese Crostini
Ingredients
- 1 French bread baguette (1 pound), cut into 36 slices
- 2 cups shredded Monterey Jack cheese
- 2/3 cup mayonnaise
- 1/2 cup sliced almonds, toasted
- 6 bacon strips, cooked and crumbled
- 1 green onion, chopped
- Dash salt
- Additional toasted almonds, optional
Directions
- Place bread slices on an ungreased baking sheet. Bake at 400° for 8-9 minutes or until lightly browned.
- Meanwhile, in a large bowl, combine the cheese, mayonnaise, almonds, bacon, onion and salt. Spread over bread. Bake for 7-8 minutes or until cheese is melted. Sprinkle with additional almonds if desired. Serve warm.
See what I mean? EASY………………and who’d have thought that bacon and almonds with cheese could possibly taste this good………..well………it’s a winner and it’s easy so that had my attention right off the bat.

Bacon makes everyone happy doesn’t it? I do recognize that not everyone eats bacon………or if they do it’s turkey bacon (which is delicious)……..but once in a while we deserve a treat – something we don’t normally eat because maybe it’s not that good for us. I “get” that believe me. But all of us need to spoil ourselves SOMETIMES!
Yep – we all need the occasional tingle…….!
Give this one a try. Trust me.

It sounds wonderful and you were right I am sure it would work for tomorrow BUT it will get my… wait for it… cook top dirty! Hahaha! I will show it to CH. I can buy crostini at the Publix. I was kinda thinking little meatballs on little Hawaiian rolls with a bit of sauce. Last weeks appetizer was good!

Oh the meatball thingie sounds wonderful and I’m sure your friends would LOVE that – GO FOR IT. I don’t blame you for not wanting to mess up the cooktop BUTTTTTTTTTTTTTTTTTT sooner or later you’ve gonna HAVE to cook on it…..then there’s always using those splatter shields (my Mom has TWO of those babies and they work). Good thing too since we DO have a lot of bacon around this house (happily).

Oh it has been christened! And used daily since delivery on the 20th. Haven’t fired up the oven yet but we don’t use the oven much. Splatter shields? Must google!

I have TWO sizes – one for each of my frying pans. They amazingly work. BED, BATH and BEYOND has them!

Yummy!!! I have avocado mayo and some fresh basil, which I hope to chop up and use instead of the optional almonds.

I like almonds, too, but love avocados and basil. In fact, I have 4 fresh-from-the-tree avocados ripening on my kitchen counter (picked early so the pesky squirrel doesn’t get them)…. I”m thinking quacamole could be an interesting variation on this recipe….

Yes it would – a delicious variation. I love avocados – I like starting the plants from seeds too and right now I have FIVE plants – one outside and four inside. Good for you having FRESH from the tree avocados though – FABULOUS!

Pam, we frequently trade. Their water avocado produces bushels, as does our star fruit tree. The mango tree will soon start getting ripe, too, so if you happen to have any mango/bacon recipes, I would love to try them! Jeanne

Mini pizzas with BACON!!!! We love it. Mom says a lot of people don’t like almonds, but she thinks they add a nice crunchy flavor.

It’s kinda interesting how the almonds fit in with this kind of thing but yep – that extra crunchy is mighty fine with the bacon and cheese!

I had a cat show today, but do you know what they were serving at breakfast? Waffles! Isn’t that the most ridiculous thing you ever heard? For some reason my human disagrees (even though she didn’t get any) – she thought they looked good.

I noticed at work this morning that Smithfield has a contest where the grand prize is “A Lifetime Supply of Bacon.” I have no idea how much bacon a lifetime’s supply would be, but I’ll bet it’s a lot. Even if you account for the shortened lifespan of eating a lifetime’s supply of bacon…

Oh man! Smithfield bacon is the best….we have friends who live in Smithfield, VA. A lifetime supply would be a GREAT treat indeed! I’ll have to look into that.

Teddy, this sounds super delicious and so easy. Mom and Dad had bacon this morning. We didn’t. Dad used to get baguettes all the time, but hasn’t since he and Mom have been dieting.
