Bakin’ With Bacon and King Teddy

It’s ALMOST July 4th – we’re celebrating early!

I have a recipe for you that is worth making part of your celebration for July 4th – or any other holiday or special occasion – because it is just plain incredibly yummy!    Really.   We could hardly wait to try this recipe because even though it has a lot of “steps” and ingredients, it’s really NOT tough to make.   Most of all trust me on this – it’s WORTH THE EFFORT (and you can stick a little flag decoration on top for the 4th!).   Ready?

Maple Browned Butter Bacon Cupcakes

INGREDIENTS:

For the cupcakes:
4 strips bacon
¾ cup plus ½ teaspoon packed light brown sugar, divided
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
1 stick butter
2 large eggs
1/3 cup low-fat buttermilk
¼ cup maple syrup
1 teaspoon vanilla extract

For the frosting:
2 sticks butter, at room temperature
2-3 cups confectioner’s sugar, depending on how sweet you like your frosting
1 teaspoon vanilla
¼ cup milk
2 tablespoons maple syrup

DIRECTIONS:
1. Preheat oven to 375 °F and line your mini cupcake or regular-sized muffin tin with cupcake liners.
2. Line a rimmed baking pan with aluminum foil. Place strips of bacon in baking pan, place pan in the oven and cook for 15 minutes.
3. While the bacon is cooking, place ½ cup butter in a frying pan and cook on medium high until the mixture turns a brown color and you can smell a faint nuttiness.
4. Once the butter is browned, set aside or place into a refrigerator to cool.
5. Remove two strips of bacon and place onto a plate lined with a paper towel to absorb the grease.
6. Sprinkle the remaining pieces with ½ teaspoon of brown sugar, and place back in the oven for three more minutes.

7. Remove remaining bacon from oven and set aside.  This bacon will be used as a garnish.
8. Reduce oven temperature to 350°F.
9. In a medium-sized bowl, combine flour, baking powder and salt.
10. In a separate larger bowl, mix together browned butter, remaining ¾ cup brown sugar, eggs, buttermilk, maple syrup and vanilla extract.
11. Gradually mix in dry ingredients.
12. Crumble two strips of bacon (without sugar) and fold into the batter.
13. Fill cupcake liners 2/3 full with batter.                                                                                                                                                                                                                                14. Bake for 8-10 minutes. To check if the cupcakes are done, place a toothpick in one cup.  If the toothpick comes out clean, the cupcakes are ready!
15. Let cool in the pan for about two minutes. Then move cupcakes to a wire cooling rack and cool completely.
16. While cupcakes are cooling, whip butter and sugar in a large bowl for the frosting.

17. Once butter and sugar is fully combined and there are no clumps, add remaining ingredients.
18. When cupcakes are cool, prepare a piping bag (or a Ziploc bag with a hole cut out in the corner) with frosting. Frost cupcakes with piping bag.
19. Crumble the candied bacon and place on top of cupcakes as a garnish.

 

Oooh la la – talk about melt in your mouth goodness – THIS IS IT!

  1. Yes!! YUM!

    But not for a while here, yet…while I am still on the detox program…another month or two…one of those yummers will surely set me back, though, LOL!!!

    For us, its the beginning of the Canadian long weekend, as July First is Canada Day. Our Flag will be flying, weather permitting! The we’ll fly the Stars and Stipes on Thursday!

    I will be at work on the 4th, and all the staff will be wearing patriotic clothes instead of our regular uniforms.

    • I’m sure you’ll be feeling wonderful after the detox is over with….something that lasts that long can bring permanent diet changes I should think. Hope your Canada Day will be nice!

  3. Browned butter makes everything taste better… and bacon too, of course. I make browned butter icing for pumpkin loaves at Christmas. These cupcakes would be fun to make the day before the 4th. I got lost somewhere between step 3 and 13 but SSNS will pull it together!

  4. The cupcakes look really good. Thanks for the recipe. I probably won’t get to make them though because David is on a health kick because his glucose was a little high so now I am using almond flour and stevia -yuck! XO

    • Almond flour isn’t TOO bad but stevia – ick. BUT that’s wonderful that David is keeping an eye on his diet – I’m paying more attention to what I eat lately thinking it would be a shame if my diet kept me from being around as long as I want to be!!!
