Bacon For Christmas – At The Castle Baconia AND At Your House Too!

It’s time to figure out what you’re going to serve those friends or relatives who are visiting for Christmas when Christmas morning rolls around!    How about a delicious bacon casserole you can make in advance so you won’t be stuck in the kitchen Christmas morning?    Now before you say it, I’ll say it to you – – – we have all had these casseroles and they are all delicious but this one – well – it just has something extra – maybe it’s the potatoes – I’m not sure – but it’s just VERY VERY tasty and you can add or subtract things as you want to and it’s STILL delicious!

BACON, POTATO and EGG CASSEROLE

This size recipe is enough for ten servings but is just as good with a half recipe!

Ingredients

  • 1 lb. bacon cut into 1/2 inch strips
  • 1 yellow onion diced
  • 1 red bell pepper seeds removed and diced
  • 3 cloves garlic minced
  • 12 large eggs
  • 1 cup milk
  • 3 cups frozen diced potatoes you don’t have to thaw or cook the potatoes
  • 2 cups shredded cheddar cheese divided divided
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 green onions chopped

Instructions

  • Heat the oven to 350°F. Grease a 9×13 inch baking dish with nonstick cooking spray and set aside.
  • In a large skillet, cook bacon over medium heat, stirring occasionally. Cook until it is a nice crispy brown. Remove bacon with a slotted spoon and place on a paper towel lined plate. Roughly chop the bacon and set aside.
  • Add the onion and red pepper to the skillet and cook over medium heat until tender. Add the garlic and cook for 2 minutes. Set aside.
  • In a large bowl, beat the eggs and whisk in the milk. Stir in the cooked vegetables, potatoes, and 1 cup of the shredded cheese. Set ¾ cup of bacon aside and stir in the rest. Season with salt and pepper.
  • Pour the mixture into the prepared baking dish and top remaining cheese and green onions. Bake for 20 minutes so the eggs start to set up. Carefully add the remaining bacon to the top of the casserole. Bake for an additional 20 to 30 minutes or until the eggs are firm and the top is slightly golden brown. Let stand for 10 minutes. Cut into squares and serve warm.
  • Note: This casserole can be made in advance. Pour the mixture in the pan and refrigerate for up to 24 hours. Bake when ready to eat. You can also reheat the casserole.

 

I doubt I have to tell you that this is a special casserole – so many wonderful ingredients…………The Royal Mom is a fan of potatoes for breakfast as her Dad ALWAYS made potatoes when he was in charge of breakfast-making (or should I say when her Mom would allow him to make breakfast!).     So potatoes – fried up nice and crispy – are often on the breakfast menu at the Castle Baconia.

  4. Potatoes, bacon, egg, cheese and onion all in a casserole! That is a winner for sure, Teddy! We are having leftover parsley potatoes from last night fried up for breakfast for dinner tonight with fried eggs over easy. We love potatoes for breakfast or breakfast for dinner! TWO more sleeps…. 2… TWO!

I can’t wait and I hope Santa appreciates that we aren’t having a fire in the fireplace tomorrow so there are no hot coals for him to land on when he comes down the chimney! Your dinner sounds RIGHT UP MY ALLEY….I just love potatoes for breakfast – a little crispy on the outside too please. Hope Santa doesn’t allow his reindeer to land on your new roof…….could be dangerous!

  6. Ohhh I wish I would of saw this before I bought everything for the holidays. I would of made it. Going to be 52 on Sunday and 55 on Monday. They said on Halloween it was 36. I think Mother Nature is confused. LOL.

    • Mother Nature is definitely confused but she is what she is and Santa Paws doesn’t care WHAT the weather is like -he visits no matter what! You can make this casserole any time – it’s soooooo good!
