Bakin’ With Bacon and King Ted

‘Tis I…….King Ted……Ruler of Castle Baconia and Chef to the stars (well maybe not stars but the castle staff anyway!)

It’s time for our weekly get together where I share a fabulous (hopefully) bacon-involved recipe with you and you (hopefully) give it a try and make it part of your meal repertoire!    This is really tasty and refreshing with the tomatoes……having bacon on the top is like “icing on a cake” !!!

BLT Skillet

Ingredients

  • 4 ounces uncooked linguine
  • 4 bacon strips, cut into 1-1/2-inch pieces
  • 1 plum tomato, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 1-1/2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon minced fresh parsley

Directions

  1. Cook linguine according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 teaspoon drippings.
  2. In the drippings, saute’ tomato and garlic for 1-2 minutes or until heated through. Stir in the bacon, lemon juice, salt and pepper.
  3. Drain linguine; add to the skillet. Sprinkle with cheese and parsley; toss to coat.

 

VOILA!  A dinner in a skillet……..

  1. That sounds very tasty. We have so many tomatoes, I am picking 2-3 pounds every day. They didn’t start ripening until mid July and now they are all coming at the same time. Not only that, they are bigger than usual. I think it might be the unusually high temperatures that caused it. I will probably make tomato and basil soup and freeze it for the winter.

    • Lucky you with so many tomatoes! As a little girl I remember “harvesting” them from our plants and just standing there eating them one by one – have always loved home-grown fresh tomatoes. Won’t it be wonderful to have a stash of homemade soups for the winter……yum.

  2. Good Morning Baking King, Ted! That is a refreshing fit for summer pasta dish! Easy to prepare and sounds delicious. I have some pappardelle in the pantry and all the other ingredients so I think that will be today’s dinner or work tomorrow for Sunday dinner. Good Morning up there in Virginieeeeee!

  3. Wow Teddy, you really know what you’re doing! That BLT Skillet looks amazing, and wouldn’t take a long time to make either. Bacon is often given a bad name, but I’m with you. I haven’t ever tried baking with bacon, though. I hear there’s such a thing as candied bacon. Woo-hoo!

  5. Teddy, Mom thinks this looks scrumptious. She’s thinking it might be good with sun dried tomatoes instead of fresh, but that’s because she really loves them. Sure looks easy as well, our Mom’s favorite type of recipe.
