OK – don’t judge me alright? This is one of the most sinful bacon recipes ever – it’s the “FULL MONTY” of goodies mixed together to make something that’s a cross between a “complete breakfast in a loaf” and a “sinfully amazing dessert”. Got your interest? Good! Hold on to your hats…………
Bacon Peanut Butter Banana Bread
I know it’s a bit of a crazy combo but honestly – some of the best things in life make no sense – am I right? HAHAHA
makes one 10 x 6 loaf
INGREDIENTS
6 slices thick-cut bacon, chopped
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 large egg
2/3 cup loosely packed brown sugar
1 teaspoons vanilla extract
1/2 cup unsalted butter, melted and cooled
1/3 cup creamy peanut butter, melted and cooled
1/4 cup bacon drippings resulting from cooking bacon
4 bananas, mashed (about 2 1/4 cups mashed)
1/3 cup milk
DIRECTIONS
Preheat oven to 350 degrees F. Heat a large skillet over medium-high heat and add bacon, cooking until crisp and fat is rendered. Remove bacon and let drain on a paper towel until ready to use. Reserve 1/4 cup of bacon drippings and set aside.
Spray a loaf pan liberally with non-stick spray or grease with butter. In a bowl, mix together flour, baking powder, salt, and cinnamon then set aside.
In a large bowl, whisk egg and sugar together until smooth. Whisk in vanilla extract, peanut butter, bacon drippings and butter, then add bananas and milk and mix until combined. Add in dry ingredients slowing, mixing with a spoon until batter comes together. Fold in bacon until it’s equally distributed.
Pour batter into loaf pan. Set pan on a baking sheet, then bake for 45-50 minutes, or until center is set and a toothpick inserted comes out clean. Remove bread from oven and let cool completely before cutting.
If you think about it – this recipe is really easy – lots of ingredients but once you’ve mixed them together – well – the hard stuff is done right? This is incredibly good. I know some people don’t like peanut butter and some of you can’t eat bacon – actually this recipe would be OK without bacon but gotta have the peanut butter! My Mom goes a step further and uses EXTRA CRUNCHY peanut butter but that’s not necessary. She just prefers that kind of peanut butter!
Now – are you salivating or thinking “The King Has Lost It!” ? Trust me. You’re gonna love me even more than you do now if you make this.
Oh, wow, now that’s a wild recipe.

No judging here. Just thinking there will be another trip to Publix… third day in a row… to purchase ingredients we do not have on your list. Also, I know it sounds unthinkable but I do not have a loaf pan… (?) Yesterday’s trip to Publix was for the goods it takes to make vegetable beef soup because Cecilia made that irresistible. The vegetable beef soup last night was gourmet. Bacon Peanut Butter Banana Bread sounds irresistible! Thank you Bacon King Teddy! Tell your Mom… er, the Graphics Department that the two pigs are super giggle worthy.

I get motivated like that too! And just reading what you said makes me think about heading out to get the beef to make the vegetable beef soup myself! I LOVE home made vegetable soup!

You won’t be sorry! I can’t express enough how delicious it was. It had been a long time since I made it… years.

That recipe Miss Cecilia posted was a winner – Mom copied it. Let me just say the BPBBB is incredibly scrummy (Mom says that’s British for scrumptious). I’m so glad we can bring some interesting additions to your grocery list!!! No loaf pan? Our grocery store has a small department of “baking pans” and has loaf pans…..take a peek at Publix you might find one!!!! Mom couldn’t manage without a loaf pan…..zucchini bread, banana/nut bread…..meatloaf.

Chef Teddy, you truly are the King of Bacon. I would have never imagined this. Thank you. Plus, you may have inspired something. Are you familiar with Fluffernutters? …. a peanut butter and creamy marshmallow sandwich? Well, I think Fluffernutter Deluxe by adding a sliced banana. … and know you got me to think about adding bacon bits!

We were going to say, “holy cow,” but we guess that would be “holy pig!” when mom saw this had not only butter and peanut butter but also bacon drippings, she could hear her arteries slamming shut! Dad loves peanut butter, so this would be a hit at our house, Mom would also use the crunchy type. It’s the best. Probably one of your best recipes ever, Teddy! Love to all. Well Teddy, I am afraid I will pass on this one. I love banana bread and make it often but cannot stand peanuts in any shape or form. I do try most of your recipes and leave the bacon out, but the peanut butter is a big part of this one. Oh, I wonder! I do have almond butter in the larder…..

I knew it would be one you’d pass on – pnut butter and bacon – just too much stuff isn’t it!
