Bakin’ With Bacon and King Teddy

Tonight is HALLOWEEN night…………….for us, it’s different than any other Halloween we’ve had because there will be either NO trick or treaters or very few.    A few people in our neighborhood here at the castle have decorated outside but not many.     Most Halloween celebrations are inside and no candy will be given out so lots of people are just having some good old family fun for the evening.    So I propose we give you a recipe this week for a Halloween treat that’s incredibly decadent and probably scary from the calories point of view but hey – it’s HALLOWEEN!    

Grilled Chocolate Chip Cookie Bacon S’Mores

INGREDIENTS Yields 12

12 thick-cut slices bacon (hickory smoked, Applewood smoked or maple)

12 large marshmallows

12 2-inch squares chocolate good quality

12 skewers

12 tablespoons butter, softened

3⁄4 cup brown sugar

1⁄4 cup sugar

2 teaspoons vanilla

1 egg plus 1 egg yolk

2 cups flour

1 3.4-ounce box instant French vanilla pudding mix, dry, not prepared

1 teaspoon baking soda

1⁄2 teaspoon salt

2 cups semi-sweet chocolate chips

DIRECTIONS (this calls for grilling…..I bet you clever people can figure out a way to do this without firing up the grill!)

Make the cookies: In a bowl, cream together butter, sugar and brown sugar for 1 to 2 minutes until light and very fluffy. Add vanilla, egg and egg yolk, and mix well. In a separate bowl, whisk together flour, pudding mix, baking soda, and salt.

Add dry ingredients to wet ingredients and mix until incorporated and dough comes together. Stir in chocolate chips. Cover very tightly and chill for at least 1 hour.

Preheat oven to 350 F. Roll dough into balls (about 11⁄2 inch) and space 2 to 3 inches apart on a baking sheet. Bake for 10 to 12 minutes, until lightly browned on top. Allow to cool 5 to 10 minutes on baking sheet before transferring to a cooling rack to cool completely.

To grill the bacon: Heat a grill to medium-high heat. Thread bacon onto skewers in an S-shape. Place skewers directly on grill and cook 8 to 12 minutes, rotating as needed to ensure even cooking. Transfer to a plate, let cool and then remove bacon from skewers. Set aside.

Meanwhile, roast the marshmallows: Roast marshmallows directly over the grill using skewers or roasting sticks until cooked to your preference.

Assemble s’mores: Flip one cookie over so it’s upside down. Place a square of chocolate on top of the upside-down cookie, then top with grilled marshmallow, bacon and a right side-up second cookie. Serve immediately.

Oh I think this is DEFINITELY a TREAT!

    I think we are just going to stay quietly at home…we never celebrate this day…though I put on some festive bling to make my residents smile and giggle…some of the other staff had on special shirts or fun costumes. All week long!! ( I am off for Oct 31…it being my off weekend, hooray! An extra hour of shuteye!)

  2. Oh Teddy. You are such a spooker. I jumped as I started reading! Now those treats look outstanding. Actually good for any time of days ,,, breakfast, lunch, dinner, or snacks in between any of the meals. We have a Calorie Remover that we bought on QVC – so even better.     • This really is mind-blowing isn’t it. Mom discovered that not being able to GRILL the bacon didn’t make a bit of difference when she tried this out. She also used those “slice your own” cookies and THAT didn’t make a difference either……it was just the combination of those, s’mores and bacon that sent her into orbit. She’s still not back on Earth yet………HAHAHAHA

  4. These are the MOST special s’mores in the world. OMGoodness. Mom is always ready with balls of cookie dough in the freezer, so that part is simple. She also uses a kitchen torch to toast marshmallows. The best part – the bacon – is the only thing missing from this house. Blerg.

    • Well it’s definitely the best part BUT choc chip cookies holding a s’more in the middle might be so tasty you forget you don’t have bacon in there too!

  5. OhMyGosh! Chocolate chip cookies are my favorite cookie. SSNS makes the best chocolate chip cookie. This sounds very good and I will pass it on to SSNS after he comes in from chopping out the dead stuff in the Preserve (which we have permission to do) if he doesn’t pass out first. Happy Halloween! BOO! We are having BIG connectivity problems so I hope this makes it through!

    • Hi Chickie !! You “made it through” the internet but I hope whatever the connectivity problems are will be fixed for you! Choc chips are my all time fave and s’mores are a close second – combine them and I’m in heaven. HAHAHAHAHA Happy Halloween!

    • We will be INSIDE and COZY with all the lights out so if any stray trick or treaters are looking for goodies they can try another house – they asked that NOBODY trick or treat but we all know someone will!!!!!!! Stay Safe!

  6. Well, with chocolate in those s’mores, we probably wouldn’t get one, but we sure would bug Mom to give us some of that bacon before she assembled the treats!!! We have baggies with treats that Mom is going to put out on a table for the trick or treaters. But we have BIG Kansas winds today and she is worried they will get blown away. She is going to have to get creative and figure out a way to do this.

  8. Now that’s a treat! This is the first year the mom isn’t doing Halloween. With Covid and stuff, she doesn’t think it’s wise to hand out candy, no matter how safe you try to make it. Have a Happy Meowloween, Teddy!

  9. That sounds decadent, and i bet anyone who had an outdoor party for Halloween and got the grill or a fire going could easily have made these. These would be wonderful any time you have an outdoor fire going.

    We handed out prebagged treats by wearing gloves and masks and sitting outside, and staying far enough to be safe, it was fun.

  10. Mom says this one is too much for her, and chocolate chip cookies are not her favorite…can you even believe that? We bet it is super yummy. We know your mom usually makes all the recipes.
