Bakin’ With Bacon and the King

Greetings Bacon Fans!  Welcome to the Castle Kitchen!

Here I am again – like Saturday morning clockwork – bringing you another delish bacon recipe.    This time it’s a salad and the main ingredient is something THE ROYAL MOM really loves – fresh pears.    It’s also got kale in it which is something humans seem to FORGET about as you don’t see it in a whole lot of recipes.    Ready for the recipe??

Bacon-Pear Salad with Parmesan Dressing

Just SOUNDS yummy doesn’t it.   Well it is and here’s the recipe:

 

Ingredients

• 2 cups chopped leaf lettuce
• 2 cups chopped fresh kale
• 2 medium pears, thinly sliced (your favorite type of pears – they’re all delicious!)
• 1 cup shredded pepper jack cheese
• 4 bacon strips, cooked and crumbled
• parmesan garlic dressing:
• 1/4 cup mayonnaise
• 1 tablespoon Dijon mustard
• 2 teaspoons grated Parmesan cheese
• 1/2 teaspoon garlic powder
• 1/8 teaspoon pepper
• 2 to 3 tablespoons 2% milk

Directions

1. In a large bowl, combine lettuce and kale. Top with pears, pepper jack cheese and bacon. In a small bowl, whisk mayonnaise, mustard, Parmesan cheese, garlic powder and pepper. Gradually whisk in enough milk to reach desired consistency. Drizzle over salad; toss to coat.

YES indeedy – it’s bacon alright and it’s in a delish salad!
