Final Countdown to Christmas! Our last idea for your holiday………
Are you a sugar cookie lover like my Mom is? She buys those “rolls” of sugar cookie dough and decorates them like crazy with sprinkles and sparkles and all sort of stuff but recently she saw THIS recipe and OOH LA LA…..she is also an eggnog fan. So this was just MADE to be tried! And know what? They are delicious (she says!). No – there’s no bacon in it but Christmas isn’t all about bacon (well………maybe but not today!).
Eggnog Sugar Cookies
Ingredients
- 1 cup butter, softened
- 3/4 cup vegetable oil
- 1 3/4 cups sugar (divided)
- 3/4 cup powdered sugar
- 2 tablespoons eggnog
- 2 eggs
- 5 3/4 cups flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
Frosting
- 4 tablespoons butter, softened
- 2 ounces cream cheese, softened
- 3 cups powdered sugar
- 3 tablespoons eggnog
Instructions

Preheat oven to 350 and very lightly grease a baking sheet. In a large bowl, cream butter for 2-3 minutes until fluffy. Add vegetable oil, 1 1/2 cups sugar, powdered sugar, eggnog, and eggs and mix well.

In a medium bowl whisk together flour, baking soda, cream of tartar, nutmeg, and salt. Gradually mix dry ingredients into wet ingredients until dough comes together.

Roll 1/4 cup dough into a ball. Place remaining 1/4 cup sugar in a small bowl. Roll ball in the sugar to coat. Place ball on prepared baking sheet. Use the bottom of a tall glass or cup to flatten the dough ball to about 1/2 inch thickness. (The sides of the dough should squish out around the bottom of the glass) Repeat process with remaining dough.

Bake cookies for 9-11 minutes until cookies look “dry” but are still pale in color. Allow to cool 3-4 minutes on the baking sheet. Remove from baking sheet and allow to cool completely.

To prepare the frosting, cream together butter and cream cheese until fluffy (1-2 minutes). Add powdered sugar and mix until very thick. Add eggnog and mix until frosting is smooth. Spread on cooled cookies. Store in airtight container.

Recipe Notes
* Because this frosting will stay soft, I recommend waiting to frost the cookies until shortly before serving. Keep cookies and frosting stored in separate containers in the meantime! This way you don’t have to worry about stacking the sugar cookies in a container when they are frosted.
Do I have to tell you how yum these are and that you should try making a batch??? Go for it. It’s Christmas and you’re running out of time to make baked goodies for your family and company!!

We want to wish everyone a super duper holiday…………………..we’ve had fun finding some fun stuff for you to bake for the holiday season but we will be returning to good old BACONIZED recipes next Saturday.
They sound delicious! I try to keep my sugar intake to the very minimum, but hey it is Christmas.

Never had eggnog? Wow. Mom says she’s never met anyone who hasn’t had it. It’s awfully yummy when it’s nice and ice cold. Some people put other stuff in it but Mom and Dad both love it just the way she gets it from the grocery. It’s on her list again today!

Yes, yes, YES! Your picture reminds me of the butter/sugar cookies that Land O’ Lakes had out a ways back. CH and I loved them. They didn’t have eggnog in the frosting but they were soft like you mention. Maybe “we” could make some of these tomorrow!

Oh I hope you do………eggnog is taking up a lot of room in our refrig right now because Mom and Dad LOVE IT. I got to have a lick or two but it’s so rich I didn’t really want more than just a tiny taste. Hope you and CH have some fun baking together!!!!!

These look great. I will have to wait until after Christmas to make them. Yesterday was baking day, I made peanut butter blossoms and cherry winks. Today is cleaning day and tomorrow is cooking day. XO

Oh delicious!!!! You’re baking up a storm Miss Ellen – my Mom’s baking day will be Tuesday. Bourbon pecan pie and hopefully a mincemeat pie OR pumpkin if she can’t find her beloved mincemeat! We didn’t do decorated sugar cookies this year.

Oh Gosh! Those are GREAT! Mom is thinking she might make some.
We are here in Midway. Yesterday morning, Ninja and I were thrust into carriers and after 7 hours…we were let out and Kozmo, Jo Jo and Cinnamon were as happy to see us as we were to see them!
I hope the Elves left you in. Mommy will be ever so happy that you are taking Alabaster Snowball, Bushy Evergreen, Pepper Minstix and Wunorse Openslae back to the North Pole and were all packed and ready. Mom cleaned out the fridge before we left, so there is NOTHING for them to eat.

Hi Marv! I hope you enjoy your visit in Midway with the family. Those elves we took back to the North Pole got in trouble the WHOLE WAY THERE! Santa looked a little disappointed to see them again (haha), but the other elves were happy. I think Santa put them to work shoveling reindeer poop as punishment for escaping!!!! Teddy, these sound amazing. Mom hasn’t baked one darn thing yet. Maybe we can talk her into making these; though, she’d need to pick up a few things at the store. Well, you all HAVE been busy with a lot of things these last weeks – who’s got time to bake? The bakery has lots of yummy things that only require EATING and not MAKING!
