Greetings Friends and Fellow Residents of the Kingdom of Baconia!
Yes we are gathered together here in the kitchen of the Baconia Castle to dig into another delicious recipe I’ve found for you that involves our favorite ingredient – BACON! Animals AND people love the stuff so I work hard to find some yummy recipes for you with lots of good old bacon. This time of year when everyone is baking such yummy things for visitors and families, is there any such thing as TOO MANY BACON cookies? No – I thought you’d agree with me. That’s why today’s HOLIDAY RECIPE is for cookies! Not just any cookies but these beauties!
Bacon-Maple Chocolate Chip Cookies
INGREDIENTS
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
- 1/3 cup chopped cooked bacon (or – as usual – MORE if you like!!!!!!)
- 1 cup bittersweet chocolate chips
DIRECTIONS
- Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
- Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonsful onto prepared cookie sheets.
- Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

I think bacon should be a major food group and maybe you do too. We just have to convince everyone else that WE are right! Here in my Kingdom we don’t have to be convinced – WE RULE!

Perfect timing, as usual, King Teddy! Today 3 generations plan to get together to bake cookies, so, prior to bringing my coffee in to sit down and read blogs, I put 6 eggs and a half pound of butter on top of the counter, so they could start warming up to room temperature. I don’t know that these must be a room temperature, but learned to do it this way when I was little…. My husband loves baked goods, so tends to get excited when he sees eggs on the counter. (If you do this, too, I specifically put them in a spoon rest, so then can’t roll off – 3 fit in a spoon rest and I have 4 spoon rests….. My dear hubby was positively aglow.)

Oh great idea using spoon rests for eggies! My Mom puts them in the bowl she’ll be mixing stuff in but I like egg rests better….My Mom has a bunch of Christmas ones so GET THEM OUT MOM!

Same here……….Mom has chocolate at the top of EVERYTHING……and she always has Godiva on her Christmas WISH LIST. I think Santa knows that by now!

I like Cecelia’s food pyramid. Mom’s too…just like hers. I think I will make mommy make these! The only difference will be- is not to add maple flavoring. Or… less than a tsp.

Thanks Katie! I’m sure adding less maple flavoring (or even none) works too…….it’s got the choc chips and bacon in there and that’s the important stuff anyway right????!!!!

There are lots of Christmas cookies getting baked around here – we just added this one to Mom’s list. That way maybe we can get some tastes of bacon too.

Sounds very tasty but I would never have thought of putting bacon with the chocolate. I try most of your recipes but I think I will just put bacon in a few of them and leave it out of the rest for the first time.

Funny but the salty bacon and the sweet chocolate make an AMAZING taste sensation……but I agree about recipes anyway – Mom says a recipe is a “suggested list of stuff to make something” – she always adds or subtracts in recipes. It’s called PERSONALIZING it (at least that’s her excuse!!!!!).

Hi Marv! I hope your Mom’s workload has let up so she can spend some quality time with you at home before Christmas! Bacon would be a special treat to have for the holiday……I bet Santa Paws would enjoy a couple of pieces with a glass of milk when he pops in to leave you your presents on Christmas Eve too!!!

Yummy for our tum-tum-tummies. Mom says she thinks a few pecans added too these would make them purrfect. She used to make tons of cookies during the holidays, but just doesn’t do it anymore. We’ve sure found some super yummy bacony goodies to make for the holidays this year. After Christmas I guess Castle Baconia will be a lot more quiet but I’m sure bacon will always be around!
