Que pasa?? Welcome to the Temporarily Mexican Kitchen at Casa De Baconia!
Since it’s Cinco De Mayo, how could I possibly NOT show you how to make something fabulous involving bacon? This is one most of you are familiar with but now you will know how to make them for yourselves!! A couple of notes: Avocado isn’t necessary but we are an avocado-loving household…….you don’t need kosher salt but it’s nice and chunky…….!
Ingredients: (makes four tacos)
- Preheat oven to 400° and line a large, rimmed baking sheet with foil. In one corner, make a bacon weave with 8 halves of bacon each, creating a square. Repeat to make next three weaves. Season with pepper. Place an inverted baking rack on top to make sure bacon lays flat.
- Bake until bacon is crispy, 18 to 20 minutes. Working quickly, trim each square with a paring knife or kitchen shears to make a round shape.
- Meanwhile, make scrambled eggs. In a medium bowl, whisk together eggs with milk until well incorporated.
- In a medium, nonstick skillet over medium-low heat, melt butter. Pour egg mixture into the pan. Gently move the eggs around with a spatula, creating large curds. When the eggs are almost cooked to your liking, season with salt and pepper. Fold in chives and remove from heat.
- Assemble tacos: On a serving platter, fill the bacon taco shells with eggs. Sprinkle each with cheese, nestle in a few slices of avocado, and top with hot sauce.
Have a couple of these to start your Cinco De Mayo celebration and you’ll be ready to do the Mexican Hat Dance!!
I won’t keep you – I know you have places to go and things to do on this oh so special day……………..but whatever you do remember to enjoy this fun special day……………

Oh boy, dad’s sitting here salivating, and mom’s shaking her head. She got him off of his years-long salt/fat/anything bad for you eating habits, and one mention of something like bacon and he’s like a babbling idiot!

Yep – and we all know bacon is NOT one of those “good for you” things but my Mom says “ya gotta LIVE a little while you’re here” which is her way of saying damn the torpedos, full speed ahead when it comes to bacon! Your Mom is doing a good thing for your Dad but gosh….bacon is tough to give up.

I think the best thing about that taco is the BACON the eggs are stuffed into! My Mom likes Mexican food but my Dad not so much. He does like the chili and tamale casserole my Mom makes but that’s about IT!

My Mom has been starting the seeds/pits and growing them in pots in the house….they are very cool plants. She and Dad LOVE avocados too. She offered me a bite but I didn’t (bite that is!). Don’t forget to visit Scouts for Cinco de Mayo at the Campfire!

Rey Teddy, este es un plato especial digno de cualquier día de fiesta! (In case you don’t read Spanish, I said, King Teddy, this is a special dish worthy of any holiday…. Love the idea of making the shells with bacon and adore adding avocado, which I think makes everything better…. Years ago, I read Atkin’s diet and suspect that the elimination of carbs might fit quite well with his guidelines.

Thanks for the translation (!)! My Spanish is as “elementary” as my French I’m afraid! This is a kind of unusual way to do tacos but SO worth the effort as they are amazing especially with avocado!!

LOL, we lived in Central America for about five years – learning to read Spanish was crucial! BTW, I fixed a yummy garden salad for lunch (with crumbled bacon, of course) and got to thinking that if one can make taco shells with bacon, why not taco ‘bowls’ for salads? Thought you might like this idea.
