EEEK! Mom has had a bad cold so we’ve not been keeping up very well with cyberspace activities and have to admit Shopping Around The World was on our calendar for TOMORROW! Where did Mom come up with that one?!?!?! Oh well…………..we’ll just post our soup recipe TODAY!
My parents LOVE this one…….and I have to admit, since Mom has to make chick-hen to use in the recipe, I always get a bit of a hand-out so I like when she makes this!!! It’s her easy way of making Chicken Corn Chowder Soup!
Ingredients:
2 tablespoons butter
1/4 cup chopped onion
1/4 cup chopped celery
1 jalapeño pepper, seeded and minced (optional!!!!!!)
2 tablespoons all-purpose flour
3 cups 2% reduced-fat milk
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breast halves)
1 1/2 cups fresh or frozen corn kernels (about 3 ears)
1 teaspoon chopped fresh or 1/4 teaspoon dried thyme
1/4 teaspoon ground red pepper
1/8 teaspoon salt
1 (14 3/4-ounce) can cream-style corn
Preparation:
Melt the butter in a large Dutch oven over medium heat. Add onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently. Add flour; cook 1 minute, stirring constantly. Stir in milk and remaining ingredients. Bring to a boil; cook until thick (about 5 minutes).
Easy Peasy – and MMMMMMMMMMMMMMMMM good! Since most of the items above are things you’d PROBABLY have in your cupboard anyway, we’re only including prices for a few of the items:
Chicken: on sale this week for $1.99 lb. !!!
Frozen Corn: 12 oz. $2.15
Mom says that was a good sale price for chicken breasts – at least around here………………………anyway, this is a very yummy soup so encourage your parents to make some so you can have some of the CHICKEN as a snackable!

that looks great… our corn is mostly canned, do you think that works too? btw: we have to give the new glasses back… my mother read “about 3 YEARS” instead ears… imagine that picture in the store: do you have 3 year old corn?…. oh boy :o)

YES canned corn will work JUST FINE! Mom has used it instead of frozen or fresh before. HAHAHAHAHA on the THREE YEARS of corn……maybe those glasses of your Mom’s just need to be cleaned off? There might be some “nose prints” on them from a certain WEIM?!?!?!

Sundae’s mom here: years ago, we went to a local (car) race track. And the wheel fell off one of the race cars. The announcer started singing: “You picked a fine time to leave me, loose wheel!”. (Same song as the 300 kids!)

Mom was not sure about the hot pepper but it actually tastes pretty good – alternatively just sprinkle in a bit of red pepper flakes OR even some hot curry if you like curry (my parents LOVE curry).

Looks delicious! We are going to have to try this one. I was getting ready to make chicken and Reame’s noodle soup but I think I will give this a whirl! Hope you are feeling better… bet you are getting in some lap time while your Mom fights off the pesky cold!

Take care of your mom Sammy. The Chicky Corn Chowder sounds so delish. Mom makes corn chowder as dad loves it. She uses bacon (Sammy’s favourite) instead of chicken. We’ll try the chicken though it sounds like to die for…well, not quite die…maybe just go unconscious.

Great minds think alike, for sure. Just the other day, Peep #1 made corn chowder herself! Of course, hers had no chicken on account of her being a veggie. Seems like she skipped the best part! MOUSES!

It really is just as good without the chick-hen in it but then I prefer it with chick-hen myself since I get to eat some!

That chowder looks very good. Mom loves to make soups from scratch – then you know what’s in it and not a lot of those things with big words that no one knows the meaning of. Good for a cold day.

My Mom is feeling WAY better – the cold is leaving – actually the cold is STAYING but not with Mom – Dad has it now!!!! I think Mom handed it to him so she could get RID of it!
