Bakin’ with Bacon and The King!

It’s Good To Be King!

It’s another Saturday and you know that’s MY day here in Castle Baconia – The King is creating something in the kitchen for you with the National Food of Kingdom Baconia – BACON – WHAT ELSE???    I have to explain about this recipe though – see my Dad LOVES his bratwurst!   It’s just one of those things he enjoys so Mom found this recipe that has bacon AND brats in it as well as cheese and some nice SWEET stuff to make this just about PERFECT.     You’ve GOTTA try this.

Bacon-Brats-Cheese Pizza

Ingredients

• 1 refrigerated thin pizza crust
• 4 maple-flavored bacon strips, chopped (yes as usual we made FIVE strips instead of four!)
• 1/4 cup finely chopped onion
• 3 fully cooked beer bratwurst links, finely chopped (they don’t HAVE to beer brats but Dad says they’re the best)
• 1/3 cup apricot preserves
• 2 teaspoons honey mustard
• 2 cups shredded white or yellow cheddar cheese (Mom used yellow SHARP cheddar cheese)

Directions

• Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake until edges are lightly browned, 8-10 minutes.
• Meanwhile, in a large skillet, cook bacon and onion over medium heat until bacon is crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings.
• Add bratwurst to same pan; cook and stir until browned, 2-3 minutes.
• In a small bowl, mix preserves and mustard. Spread over crust; top with bratwurst, bacon mixture and cheese. Bake until cheese is melted, 8-10 minutes

SEE?    I told you it was easy…………..and with ingredients like this how can you miss?    Mom had never had apricot preserves before but she loves fruit preserves so she got some apricot just for this recipe.    It’s now one of her faves.   You never know when you’ll find a new favorite thing!

By the way…..my Dad said that this recipe would “probably” be good even without the brats…..well, who’d have thought he’d actually say that but know what?   He’s “probably” right!
