Bakin’ With Bacon In Baconia!

‘Tis I – Your King – your “Bacon King” for this morning!!

I have another yummy and easy breakfast treat for you that can “cogitate” in your refrigerator overnight and be popped in the oven the next morning while you do other things – water the lawn, take a hot soakie bath, do your hair and makeup, trim your toenails (yuck), mow the lawn (alright maybe you won’t have time for that), do some laundry – WHATEVER.    You make this the night before and get all the work out of the way so you can bake and EAT the next day.

Easy Overnight Bacon and Egg Casserole

Ingredients

  • 6 strips Bacon (as usual I say you can do MORE or LESS bacon as you wish!)
  • 6 Eggs, lightly beaten
  • 3 C. 2% Milk
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 6 C. French Bread, cubed (or any country style bread loaf with a crust)
  • 2 C. Shredded Colby and Monterey Jack Cheese

Grease a 9×13″ baking dish with nonstick cooking spray.  Fry or microwave bacon until crispy. Crumble and set aside. In a large mixing bowl, whisk together the eggs and milk. Stir in salt and pepper as needed to taste. Add the French bread cubes, cheese, and bacon, and stir to combine. Pour the mixture into the prepared baking dish. Cover dish with plastic wrap and refrigerate overnight.

Next morning just preheat oven to 350 degrees. Bake casserole for about 1 hour, or until a toothpick inserted in the center of the casserole comes out clean.

VOILA!   Breakfast fit for a King or a Queen (or even those lowly peasants you live with……….).

Oh I shall add this to the royal menu Monsieur King!

We have to keep an eye on the kitchen staff around here!!

You don’t want to just be AVERAGE do you????   Heck no – have more bacon!

  1. I want some of this Bacon and Egg casserole right now delivered to me on the couch along with a heat wrap. No luck there because CH is still asleep and we have no BACON! We actually fit into the average person parameters with bacon consumption because,,, cholesterol. One of us in the house has to watch it (I don’t even have high cholesterol) and it isn’t CH because he doesn’t care that he should be watching it. The BACON and egg casserole sounds delish and easy to make!

  2. Sounds very like bacon and egg quiche which I love, but the pastry doesn’t love me, so this will be ideal to try.
    Hope you are feeling better now, Teddy. I haven’t been able to catch up very much while we were away.

    • I hope you and Mr. Ivor had a FABULOUS time on your mini-getaway Miss Jackie. Please do try this casserole because it’s so easy and so delicious – Mom likes having it all done the night before – she pops it in the oven and by the time she takes her shower and dresses BREAKFAST IS READY!

    • I do too – imagine I’d feel totally bacon-deprived if I only had it 18 times a year! Crazy huh? I’m a little better dear Katie……it’s all about taking “baby steps”………

  3. Maybe the average person eats at Golden Corral too often. Sometimes, their bacon looks and tastes absolutely divine. Unfortunately, most of the time it looks, feels, and tastes like a rubber band. The King of Baconia needs to send the royal chef to properly train the staff at Golden Corral…

  4. Now that sounds pretty nommy. Mom is pretty sure she’s had this at a Bed & Breakfast or two. Bacon 18 times a year. That figure sounds really low, but Mom would say her average is probably 12. Not nearly enough! Hope you got some bacon this weekend, Teddy. Sending lots of love.
