Bakin’ With Bacon for Easter Eve

HAPPY EASTER-EVE!

Yes – OF COURSE we have an Easterized bacon goodie recipe today….

How could we NOT?    Just remember if you make these that you’re using a whole egg (cut in half of course) for each little “egg-burger”……..so unless you’re only making six you’re going to need more than a dozen eggs!    Depends on whether you have a BIG family or company coming!    All I can say is these are adorable and delicious all rolled into one.  Remember you can substitute for your own taste like using dijon vs. regular mustard, etc.

BLT DEVILED EGG “SANDWICHES”

INGREDIENTS

  • 10 eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream, at room temperature
  • 1 and ¼tsp Dijon mustard
  • 2 tablespoons capers for garnish (forgot to add this to my grocery list so didn’t use them!)
  • 10 bacon slices
  • ¼ cup fresh baby lettuce
  • 1 small tomatoes or 810 cherry tomatoes
  • ¼ teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • ¼ teaspoon cumin, optional  (I didn’t use it myself)

DIRECTIONS

  1. Put all the eggs in a deep pot and cover with water. Add salt or a splash of vinegar and wait until it boils. As soon as it does, count 10 minutes (I a timer or watch the clock!). 
  2. Remove the eggs from the heat when they have boiled for exactly 10 minutes. 
  3. Drain the pot and place it with the eggs under cold water or in a bowl with ice water to stop cooking. Don’t leave them in the water for more than 15-20 minutes. 
  4. When the eggs are cool enough to handle, peel and cut them in half. Separate the yolks into a medium bowl.
  5. Mash yolks with a fork and stir in the mayonnaise and sour cream, mustard, capers, garlic powder, salt and black pepper to taste. Mix well until you get a homogeneous mixture.
  6. Cook the bacon slices in a clean non-stick skillet until crisp. Drain on paper towels. Cut the bacon in pieces. 
  7. Using a small teaspoon, fill the hole in all egg whites and add more so that the mixture coats the entire egg half.
  8. Place a piece of bacon on top of the filling. Thinly slice the tomato and place a slice on top of the bacon. Then put fresh baby lettuce and close with the other part of the egg.
  9. Use toothpicks or shrimp skewers to secure the eggs. Garnish with a sprinkle of pepper or a caper on top. Transfer to the serving platter.

I hope those of you who celebrate Easter have a wonderful one – doing what you love doing best – and if it includes having an Easter Egg Hunt maybe we gave you an idea for some super yummy “after hunt” snacks.    Either way – have a wonderful time remembering what Easter is all about AND that one of our favorite ways to enjoy those post-Easter eggs is with DEVILED EGGS!

  2. I just boiled my eggs and potatoes. They are chillin’ in the fridge in preparation for making potato salad for tonight and tomorrow.
