Bakin’ with Bacon for Super Bowl Sunday!

Welcome to the Baconian Castle kitchen – Guess who the King is rooting for tomorrow?????

Well, I must say, even though running the kingdom of Baconia is a lot of work, on Saturdays I kind of take a day off so I can come here and play in the kitchen.   Our Castle Chef takes the day off and I take over.    Over the years I’ve made a LOT of yummy bacon things and in fact, have done a number of bacon dips for you with similar recipes BUT today I’m giving you the recipe for the FAVORITE bacon dip/spread EVER at least as far as the ROYAL PARENTS are concerned.    My Mom and Dad have this on toasted bagette slices, dipping chips, crackers, ANYTHING you like to use to put a dip on.    Doesn’t matter because this is just the BEST.    So if you have a crowd coming to your castle tomorrow – think about making this one.   It will disappear in no time.

 

Warm and Cheesy Bacon Dip

Ingredients:
  • 16 ounces sour cream
  • 12 slices bacon (cooked and crumbled) *actually this might be more bacon than you want to use – so use as much or as little as YOU want)
  • 8 ounces cream cheese (at room temperature
  • 8 ounces cheddar cheese (shredded (about 2 cups))   *we ALWAYS use sharp cheddar but whatever cheddar you like – go for it!
  • ⅓ cup sliced scallions (about 3 scallions)
Directions:
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, stir together all of the ingredients until thoroughly combined. Spoon mixture into a 1½-quart baking dish.
  3. Bake until the dip is bubbling and starting to brown on top, 30 to 35 minutes. Serve warm with chips, baguette slices or your favorite crackers.

TOUCHDOWN!   Yep it’s really yummy!

Realizing not everyone is “into” football, or even involved in Super Bowl Sunday if you live across the pond or in another area of the world – we in the castle are rooting for the New England Patriots to win over the Los Angeles Rams.   But as it always is in sports – anything goes.    So who knows how things will turn out???    Not me – I just know I’ll be watching and eating WARM AND CHEESEY BACON DIP!!!!

And when the game gets boring, if it does, I’ll curl up on my throne and nap!

I am the ultimate busy boy…………….truly.   Seems like every time I turn around I’m having to remind Mom of this, that, or the other.  Her February calendar already has more writing on it than days of the month are available to write on!   There’s always SOMETHING going on in the blogosphere isn’t there………….

The next item on my calendar is the Super Bowl.  My Mom used to be INSANE about football – even though the Washington Redskins have only had some brief “time in the sun” with successes, including actually having a good year THIS year – for the most part, she became just a bit disenchanted and quit watching every single game.   There’s a whole new cast of characters now on the ‘Skins but she has ALWAYS watched at least SOME of the Super Bowl.   She’ll be there with 87 bazillion other people this Sunday – believe me.

Partly because the Cat Scouts are having a Super Bowl Party and it’s hosted by my Troop in our fabulously comfortable Wildcats Troop Lodge!   Wanna see how I decorated the place for our party?

Happy Groundhog Day!

Boy was it a BUSY weekend!   Especially yesterday……………….at Cat Scouts we started off with a big birthday party with a Groundhog theme in honor of TODAY being Groundhog Day.

We then slowly moved through the day and afternoon getting ready to PARTY HEARTY at the Super Bowl.   Some cats watched the Kitten Bowl but we don’t have cable so we couldn’t see it (sniff sniff).   Although I did have a chance to toss the ball around with a kitten prior to the game!

Then the BIG GAME started and all I know is there was no score at the end of the first quarter.  Why is that all I know?  Well because I was so tired from the long day that I stopped watching before the game was over that’s why and I don’t know who won (at least at the time I’m writing this blog which was LAST NIGHT!!!!) – so by now we all know if the Patriots or the Seahawks won.  I was rooting for the Seahawks………….

We all (Mom, Dad and me) had an early night – we were pooped…………and know what else happened yesterday?   My pal Raz’s Dad was discharged from the hospital and he’s HOME!!!    Thanks to all of you who sent POTP while his Dad had his operation – he’s doing GREAT and will be recuperating at home now.

Hi Everyone!   First things first…………..thanks so much for all your purrs, prayers and POTP for Raz and his Dad and their whole family these past several days.   Believe me – they “felt the love” and thanks for joining in on the love-fest because it really does help more than you know!   We’ve all needed our friends before when we’ve gone through tough stuff and you all came through for Raz and his family.   His Dad had his bypass surgery yesterday afternoon and is resting comfortably in his room while they keep a close eye on him.   With some luck he’ll be home early next week and things will begin to be “right” in Raz’s house again – they have all missed their Dad like crazy!

Speaking of Cat Scouts – we’re of course having a big fat Super Bowl party on Sunday……………my Mom used to be one of those “insane” football fans – well in her dotage she’s not as insane as she used to be (well…..let me reconsider that statement).   She doesn’t scream and yell when she’s watching the Super Bowl…….she just smiles or cries QUIETLY.   I know in my house we’re rooting for the Seattle Seahawks.   I happen to be a fan of football AND baseball.   Ever since I was a wee guy I’ve loved to watch that on TV – Mom says it must be the little ball flying around and the tiny people running every which way for football and she’s not QUITE figured out what’s fascinating about baseball because there’s not as much “action” on the screen but I still watch.   I’m a real sports dude.   Are you going to be watching the Super Bowl?????
