Oh My King – I’m already GREEN so I must be Irish too!
What are we going to tell you about this morning? Since it’s Saint Patrick’s Day we couldn’t resist telling you about an Irish favorite called “BOXTY”………..this version features (you guessed it) BACON!!!!!
Irish Boxty with Bacon and Scallions
Boxty is the Irish term for potato pancakes! This is just an Irish version which is – trust me – delicious…………………………..
- Ingredients

- 3 slices of bacon
- 2 medium potatoes peeled
- 2 or 3 scallions, white and light green parts only, finely sliced or chopped
- 1 cup flour
- 1 teaspoon baking soda
- salt and freshly ground black pepper
- 3-4 Tablespoons of butter
Fry bacon – break pieces up into small size bits – save a BIT of the bacon grease
Boil potatoes and mash them…………….
In a bowl put your mashed potatoes, scallions, salt/pepper, flour, baking soda – mix well then add crumbled bacon and mix again.
Heat butter in frying pan, make small size “pancakes” of the mixture and put in hot oil. Brown on each side – drain and SERVE! Great as a side with eggs!!
There you have it – something to celebrate with for breakfast this morning. These aren’t just good for breakfast though as you can imagine……..they’re just plain GOOD.
