Welcome to my little contribution to Bacon of Pig Love’s monthly shopping/sharing/recipe post where we get to see prices of foodables around the world AND share a recipe with the universe at the same time.

This month’s “shopping challenge” was to purchase stuff to make your favorite GRILLING FOOD!

One of my Mom and Dad’s favorite things to cook on our grill is SALMON…………I have no objection to that whatsoever because without fail, Mom always shares with me!!!

This one is super easy…………….GRILLED SALMON IN FOIL

Salmon Grilled in Foil Recipe

Ingredients

  • 4 salmon fillets (4 ounces each)   (price:   Fresh Boneless Salmon Filets $9.99/lb.)
  • 1 teaspoon garlic powder  (Price:  3 oz. shaker $2.49)
  • 1 teaspoon lemon-pepper seasoning  (Price:  3 oz. shaker $1.89)
  • 1 teaspoon curry powder (Price:   3 oz. shaker $3.89)
  • 1/2 teaspoon salt  (didn’t add salt)
  • 1 small onion, cut into rings (Price:  One 5 oz. yellow onion $0.16)
  • 2 medium tomatoes, seeded and chopped  (Price:   two 9-oz. tomatoes, $1.40)

Directions

  1. Place salmon, skin side down, on a double thickness of heavy-duty foil (about 18 in. x 12 in.). Combine the garlic powder, lemon-pepper, curry and salt; sprinkle over salmon. Top with onion and tomatoes. Fold foil over fish and seal tightly.
  2. Grill, covered, over medium heat for 10-15 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape. Yield: 4 servings

 

YUMMERS!!!!!!!!     Salmon is one of my favorite flavors of Fancy Feast too…….tee hee….but FRESH salmon – what a treat.

Time to Shop for FOOD!

That’s right – it’s that day of the month for the Shopping Around the World post – a chance for us to share what stuff costs in our area of the universe…..a fun exercise hosted by our buds Fozziemum AND Bacon!

This month’s recipe is for a salad – any salad – and salads are PURRRRFECT meals in the summer when you don’t want some big old heavy meal in your tummy.    I’m not much of a salad guy but my parents enjoy a nice COOOOOL salad in summer.

One of Mom’s faves is a nice SIMPLE  shrimp salad………………….and when I say simple, I mean SIMPLE!

SHRIMPSALAD

Ingredients:

Package of cooked shrimp – 12 oz. $8.99 (remove shell from tails of course!)

One head romaine lettuce – torn into bite size pieces – $1.99

One chopped red bell pepper – $2.49 Each (yes that’s a lot for ONE bell pepper!!!!)

One stalk chopped celery – one bunch of celery $1.99

One chopped cucumber – $.50 each

Mayonnaise to hold it all together!  – 8 oz. jar Hellmann’s Mayo – $2.99

 

Yeah it’s pretty basic but it’s also pretty good (so says Mom)……………..it all gets mixed together in a bowl (except for the lettuce) and Mom adds just enough mayo to coat everything then dumps it on top of the lettuce……….the above recipe is enough for Mom and Dad.   I get a can of Fancy Feast Tuna BUT I also get THREE (yes THREE) of those delightful shrimp Mom has in the salad BEFORE they get mayonnaise on them…….I like mine PLAIN please!

This month’s challenge was to make our FAVE sandwich (or as we call it here at my house SAMMICH!) and give the ingredients, recipe and costs of stuff!

We are a big sammmich family.   My Mom and Dad have a regular-sized dinner every other day and on the between days they have sammmich night!    They make lots of different sammiches but their big favorite is a BLT.   I’m a fan of that too because when Mom makes, them I get some of the “B”!    Since that’s a pretty easy and common sammich, I decided to combine TWO of their favorite easy to make sammiches in one post today so I’ll tell you about BLTs and “Loaded Tuna”………they are the biggies here.

The Pawsome BLT

Bacon, lettuce and tomato BLT sandwiches

Ingredients:Bacon (uh huh) – currently $2.97 for 12 oz. (Harris Teeter Brand) on sale!

Bread (yep gotta have that for a sammich) – currently $3.79 (Pepperidge Farm White Bread)

Mayo – always on hand in our refrig!  Hellman’s 8 oz. $2.99

Tomatoes – $.37 each (Romas)

Lettuce – Romaine – package of 3 $1.99

Do I have to tell you how to make a BLT?  Heck no – so I’ll just say this is a BIGGIE around my house………….

The Loaded Chicken Salad

CHICKENSALAD

Ingredients:

Bread (of course!) – same as above

Swanson Canned White Meat Chicken – $3.49 12.5 oz.

Onion – chopped – Mom uses sweet onions and when she can get them, Vidalia onions!

Sweet pickle – chopped – Vlasic Sweet, 16 oz. $3.59

Mayo – as I said above – always on hand in our refrig!

Celery – chopped – for that extra crunch!  $1.99 a bunch

AND the TOP SECRET (no longer) INGREDIENT????????   Curry powder!  (1 oz. McCormick Curry $4.99)  That’s right – curry – adds some zip to the chicken salad and my parents love curry – obviously this is an optional item and only weirdos like my parents would put curry powder (preferably madras which is the hot stuff) in their chicken salad but I’m told (cuz I haven’t had it) it’s delish.

This month’s recipe called for us to share one of our favorite snackables or appetizers and that should be EASY PEASY since who doesn’t have a pile of those kind of recipes???   We sure do.   I’m gonna tell you about one of Mom and Dad’s easiest and favorite-est (haha) snacks!

BBQ CHICKEN BITES!

Ingredients:

1 egg

2 tablespoons milk

4 cups crushed BBQ potato chips

1/2 lb. boneless, skinless chicken breasts cut into 1-1/2 inch cubes

BBQ sauce for dipping

COST OF INGREDIENTS:

Chicken Breasts – $2.29/lb.

Lay’s Sweet Southern Heat BBQ Potato Chips (Mom’s favorite kind) – $3.29 for 7.75 oz. bag

The other ingredients we didn’t buy – we ALWAYS have eggs, milk and BBQ sauce available!!!

RECIPE:

In small bowl mix egg and milk with a whisk.   Crush chips in separate bowl.   Dip chicken cubes into egg mix then into chips.   Put on greased baking sheet and cook for 10-15 minutes (until chicken is no longer pink) in 400 degree oven!    EASY PEASY!!    Use the BBQ sauce as a dip and anyone who loves BBQ will LOVE THIS!!!   TRUST ME!!!

EEEK!   Mom has had a bad cold so we’ve not been keeping up very well with cyberspace activities and have to admit Shopping Around The World was on our calendar for TOMORROW!   Where did Mom come up with that one?!?!?!   Oh well…………..we’ll just post our soup recipe TODAY!

My parents LOVE this one…….and I have to admit, since Mom has to make chick-hen to use in the recipe, I always get a bit of a hand-out so I like when she makes this!!!  It’s her easy way of making Chicken Corn Chowder Soup!

CHICKENCORNCHOWDER

Ingredients:

2 tablespoons butter

1/4 cup chopped onion
1/4 cup chopped celery
1 jalapeño pepper, seeded and minced (optional!!!!!!)
2 tablespoons all-purpose flour
3 cups 2% reduced-fat milk
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breast halves)
1 1/2 cups fresh or frozen corn kernels (about 3 ears)
1 teaspoon chopped fresh or 1/4 teaspoon dried thyme
1/4 teaspoon ground red pepper
1/8 teaspoon salt
1 (14 3/4-ounce) can cream-style corn
Preparation:
Melt the butter in a large Dutch oven over medium heat. Add onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently. Add flour; cook 1 minute, stirring constantly. Stir in milk and remaining ingredients. Bring to a boil; cook until thick (about 5 minutes).
Easy Peasy – and MMMMMMMMMMMMMMMMM good!    Since most of the items above are things you’d PROBABLY have in your cupboard anyway, we’re only including prices for a few of the items:
Chicken:   on sale this week for $1.99 lb.  !!!
Frozen Corn:   12 oz. $2.15
Mom says that was a good sale price for chicken breasts – at least around here………………………anyway, this is a very yummy soup so encourage your parents to make some so you can have some of the CHICKEN as a snackable!
