King Teddy – coming to you from Castle Baconia’s kitchen!

It’s time for our little Saturday get together where I give you an incredibly delightful recipe for an amazingly EASY (most of the time) snack that I’ve managed to find in the blogosphere.    Today’s really is just about the easiest – although slightly strange – recipe involving bacon that I’ve EVER given you!

Oh Monsieur Le King I shall be taking notes – Easy recipes means more time for me to float in the moat here at Castle Baconia!!!

Well this will give you lots of leisure time that’s for sure……………and it will give ME a whole lotta great snacks.

Bacon-Parmesan Cracker Delites

Now this recipe might sound just a little weird – hard to imagine something this simple could be this good but trust me…………. For one thing it uses Club Crackers which always have been one of my Mom’s FAVORITE crackers (next to Ritz maybe!)………and I’m thinking you probably can substitute other similarly shaped crackers for Club – I think the Club is the BEST of the REST.

INGREDIENTS

1 package Club Crackers (this recipe will make 36 appetizers)

1 lb. thin sliced bacon (the thick stuff which is our favorite around here is too thick to use for wrapping!)

Container of Kraft Grated Parmesan OR if you really want to go crazy get the Parmesan/Romano mix!

DIRECTIONS

Lay crackers (as many as you want) face up on a baking rack/cooling rack.

Scoop about 1 teaspoon of grated Parmesan cheese onto each cracker. Cut your package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.

Place the bacon wrapped crackers on the rack onto a baking sheet.

Place in a 250-degree oven for about 2 hours.   (yes I know this sounds nuts at such a low temp but it works!   It really does work!)

 

Cool these babies when they get out of the oven but they are delish warm or room temp either way.    It’s just a very seemingly unusual recipe that’s beyond simple but also delightful.   That’s a good combination right??????

Bakin’ With Bacon In Baconia

Greetings Baconians!  Time to BAKE!

Hello from the kitchens of the Baconian Castle where I – your King Teddy – am preparing another bacon-full delight and this time it’s just a very SIMPLE Bacon Casserole that you might want to have your Mom WHIP UP on Christmas morning!!!    It can be made the night before so you can enjoy it Christmas morning then open all your packages from Santa Paws as soon as you gobble it down!

Yes it is and that’s why I think starting your Christmas morning off with this recipe would be LOVE-ly!

Easy Peasy Bacon Casserole

INGREDIENTS

  • 1/2 pound sliced bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 12 eggs
  • 1 cup milk
  • 1 (16 ounce) package frozen hash brown potatoes, thawed
  • 1 cup shredded Cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  1. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. In same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon.
  2. In a large bowl, whisk the eggs and milk. Stir in hash browns, cheese, salt, pepper, onion mixture and reserved bacon.
  3. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 35-45 minutes or until a knife inserted near the center comes out clean.

Easy?  You betcha!

Like I said, gobble this down – maybe with some homemade biscuits and then attack all those presents under the tree.    You don’t want to waste time having a long drawn out breakfast on Christmas morning!

Well if you should have any leftover bacon – EAT IT.    Don’t let it be lonely on the plate – nothing worse than sad bacon I always say.  And I should know – after all I am the KING OF BACONIA.

Those of you who are really MAJOR bacon fans might like to know that there are a lot of bacon Christmas tree ornaments available out there……………..

AND, for the ADULTS out there – our friend Carol sent in this little indulgence which is definitely NOT “kid friendly” but might be just the ticket for parents after a morning of screaming kids excited over Christmas!!!!

Well kiddies – that’s it from Baconia this morning……………we hope you will INSIST that your personal kitchen staff make the simple casserole for you as it DOES have bacon in it (and you can instruct them to put even more in than the recipe calls for you know!!!!)…………and is delicious too!

Even the King of Baking needs a rest after fixing breakfast right?

Bakin’ With Bacon AND Blogging for Peace

Happy Saturday Fellow Baconians!  

‘Tis I, your King, baking for my kingdom today!

Welcome to the castle – I am going to prepare a little ADULT TREAT today – one that your parents may enjoy during the upcoming holiday season with their friends.   This is not a pet friendly dessert though – not is it a KID-friendly dessert.   It contains ALCOHOL and a WHOLE lot of bacon.   Ask your Mom to let you have some of the bacon before it gets mixed into the recipe because it tastes yummy all on its’ own!

BACON WALNUT RUM BALLS (remember this is NOT for us kids – it’s for our Moms and Dads!!)

Ingredients:

5 oz can evaporated milk
1 cup semisweet chocolate chips
1/2 cup spiced rum
1 package vanilla wafers, crushed very fine
2 cups finely chopped walnuts
1 cup confectioners’ sugar for rolling
1 lb hickory bacon, cooked, chopped

Instructions:

Line a baking pan with foil and lay your bacon strips on it. Place it in the oven then turn the oven to 400. Cook for 17-20 minutes. Drain grease from bacon, chop, and set aside.   Of course if you want to you can just FRY the bacon in a pan but this is a LOT of bacon so it’s just easier to do it in the oven!

In a food processor, chop up the vanilla wafers until they are in tiny pieces.

Melt chocolate chips and evaporated milk in a bowl over a boiling pit of water, stirring frequently until smooth. Remove from heat.

Stir in the crushed vanilla wafers, bacon, and rum until well blended.

Roll the dough into small balls and roll the balls in chopped walnuts, then repeat in confectioners’ sugar.

Store covered in the refrigerator. Eat responsibly!

This probably sounds like a SUPER DUPER EASY PEASY recipe and it is but just remember to be super careful when melting the chips over boiling water – FRANKLY, I think you can easily melt the chips in the microwave which I do for other recipes then add the evaporated milk.

My Mom said she bets this would still be good without the rum but not nearly as fun (speaking as an adult of course).

 

SO that’s my recipe of the day from the kitchen of the Castle Baconia.    My Mom says these are delicious and I guess I’ll take her word for it.   I will make them for her but SHE and DAD will eat them – not this King!!

We are also celebrating the BLOG BLAST FOR PEACE today………………..we in the Castle Baconia are all for PEACE.    It seems a rather elusive thing outside the walls of our happy Kingdom but we would hope and pray that everyone in the world would realize that to HAVE PEACE, we must BE PEACE.     It’s up to US to achieve it, and I know my Mom says almost every day that if she had JUST ONE WISH, it would be that this world we live in would be one of PEACE and HARMONY.     That we could accept one another, care for one another and be KIND to one another.    Won’t you join in the effort to spread this wish above all other wishes?    Make your own peace globe and show the world that you are praying and hoping for PEACE…………just like we are.   If you click on my globe, it will take you to the site.

Bakin’ with Bacon in Baconia

I May Be King, But I’m Also Head Baker!

Seems our fabulous Chef here in Baconia is not fond of baking – he loves all his other specialties (and so do we!) but baking is not his fave SOOOOOOO, I told him that I would happily take over baking chores even though I am the KING!

First I thought I’d make a Chocolate Bacon Bomb Pie – just the name sounds like something we should all try at least once right?   Bacon and chocolate are a good combo!

Chocolate Bacon Bomb Pie

  • 3 cups pretzel twists (you can use whatever pretzels you have, I used twists)
  • 2/3 cup sugar, divided
  • 1 stick of butter, divided
  • 1 package Fudge Stripes Dark Chocolate Cookies from Keebler (11.5 oz)
  • 12 oz package of bacon, cooked and diced (1/4 cup reserved)
  • 3 eggs
  • 1 TBSP vinegar
  • 1 TBSP flour
  • 1/4 cup chocolate chips
  • 1 can sweetened condensed milk
  1. Preheat your oven to 350.
  2. Crush your pretzels and in a large bowl combine them and 1/3 cup melted butter and 1/3 cup sugar.  Mix to combine.
  3. Press the pretzel mixture into a pie plate and bake for five minutes.
  4. In the same large bowl (no need to clean it out) crush your chocolate cookies.  Now add the remainder of the butter (melted), the bacon (remember to save 1/4 a cup), eggs, the remainder of the sugar, vinegar, and flour and mix well.
  5. Gently pour the mixture into your pie crust.
  6. Top with the remaining bacon and the chocolate chips.
  7. Pour the sweetened condensed milk over it and bake for 35 minutes or until the edges of the pie begin to turn golden brown.

Alright – so that’s kind of a complicated recipe but doesn’t it sound NOMMY?????

Greetings Fellow Baconians!

I thought today I’d share some photos from the official Baconian Photo Album………………..the countryside of course is covered in bacon – trees, rocks, houses, it’s all bacon………but I do travel through from time to time to stop and visit my loyal subjects.    Here are just a few of the photos the official Baconian Photographer has snapped!

It seems that everyone is happy in Baconia.   That makes ME happy.    A big part of that happiness is obviously EATING bacon so shall we?   Oh LET’S!!!!!!
