SPARK on Monday

Happy Monday.  Time for a SPARK.  “SPARKS” was started by Annie McGuffy of McGuffy’s Reader but ended when she stopped blogging some time ago. It was meant to be a way to start out each week with with a meaningful thought – something that spoke to each of us and hopefully everyone else who read it. Although Annie isn’t currently blogging, a lot of us who enjoyed her SPARKS decided to keep posting SPARKS of our own.

Was thinking about friendships this past week……..Friends to me are very precious and important and this quote is a nice way of saying don’t take friendships for granted and appreciate every single friend you have.

I have a feeling that The Cat On My Head will have a special selfie today considering they have two new residents!   As for me – I have a photo from last weekend that I didn’t use on last Sunday’s Selfie post so I’m gonna show it now.    I was on the front porch enjoying a drink of water in my red bowl (Mom keeps a bowl of water on the front porch for me when I’m outside – it gets hot out there!).

Now with the help of good old Lunapic we’ll jazz it up a bit then turn it into a puzzle for you!

Bakin’ with Bacon and the King

Step right up and grab a seat in the kitchen!  I have another bacon recipe to share!

I couldn’t resist giving you this recipe – you may even have made it before – it’s been around for years.    It’s even entirely possible I’ve given this one to you before BUT it’s too good NOT to repeat if I did!     It’s really delicious and as always remember you can make substitutions or leave something out because recipes are GUIDELINES.   Also I’ll tell you it’s OK to cheat and buy already baked cornbread (our grocery has it – I suppose some don’t) but the packaged cornbread mixes are really delicious.

Cheddar Corn Pudding With Bacon

 

Ingredients

  • 1 tablespoon olive oil
  • 3/4 cup chopped sweet onion
  • 3/4 cup chopped sweet red pepper
  • 4 large eggs, room temperature
  • 1 cup heavy whipping cream
  • 1 teaspoon baking soda
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon salt
  • 2 cups fresh or frozen corn
  • 2 cups crushed cornbread stuffing
  • 1/2 pound bacon strips, cooked and crumbled
  • 1-1/2 cups shredded sharp cheddar cheese, divided

Directions

  1. Preheat oven to 350°. In a 10-in. cast-iron or other ovenproof skillet, heat oil over medium heat. Add onion and red pepper; cook and stir until crisp-tender, 6-8 minutes. Remove from skillet; set aside.
    In a large bowl, whisk eggs, cream, baking soda, hot pepper sauce and salt. Stir in corn, stuffing, bacon, 1 cup cheese and onion mixture. Transfer to skillet.
    Bake, uncovered, 35 minutes. Sprinkle with remaining 1/2 cup cheese. Bake until puffed and golden brown, 5-10 minutes longer. Let stand 10 minutes before serving.

 

My Mom says her Mom used to make corn pudding on a RARE occasion but never added cheddar and never added bacon…………seems like those two things are TOTALLY NECESSARY to me!    LOL    Give this one a try.    Sure is good.    Mom made pork chops the night she made this for the “side”……………She says it was “MMMMMMMMMGOOD” !

Friendly Fill-Ins Blog Hop

Hi Friday friends!!    It’s time – time to fill in the blanks in the four sentences our co-hosts (above) give us every week.   It’s fun – and easy.   If you want to join in just click the badge above and find the sentences to fill in with your own words.

My Mom and I sometimes BOTH fill in the blanks – and other times just me and even sometimes just her.    What did we do this week?    Well if I’m the one who supplied the word then the word is in BLUE but if Mom supplied the word, it’s in GREEN.


1.  I would rather hear nails on a chalkboard than hear an animal in distress.   
2.The best part of going to the vet is coming back home!.
3. I wouldn’t mind if my freckles disappeared. (I’ve had freckles all my life but add to those the age spots I ALSO have now and I look like a cheetah – or dalmation – or leopard or WHATEVER!)
4. If I could create one rule that everyone in the world had to follow, it would be rescue an animal from a shelter and let it know what LOVE is – like I do!

Thankful and Poetic Thursday

We had more rather severe t-storms this week just as last week but we’re also having some nice days between – I am THANKFUL.   No loss of power – no trees down – just nice WET days.    I’m also thankful that my Chewy order for my special food arrived – Mom is thrilled that I like it – I am rather “selective” (a nice word for PICKY) about food.    Another thing I’m thankful for is that I can share Angel Sammy’s poem with you again since I got it from him via Rainbow Bridge Email this morning.

POETRY TIME!

Hi friends……….good to be with you – even if it’s just once a week at least we can share some fun right?    If you’re new to Poetry Thursday, every Thursday we get together to read the poems that we wrote based on the Thursday before photo that I supply each week.     So today we’ll be sharing poems from last week’s photo.    I try to find fun or challenging photos for all of us and all we do is write what we see, feel or think about the photo – fun huh?

Uhoh my little man

You fell into the “can” !

You climbed up on the seat

Trying to be discreet

The shelf behind the potty

Is Not for you Little Mr. Naughty!

Hand cream is not a toy

My little “toilet boy” !!

Let’s go change your clothes

Before our Mama knows

That’s what big sisters do –

Clean up and leave no clue!

 

I love this photo.    So many different scenarios came to mind then I zeroed in on the thing he’s holding which looks like either liquid soap or maybe lotion – something my imagination tells me he was getting from the top of the tank or a shelf behind the toilet when he fell in!    UHOH.    Good thing he has a big sister to keep him out of trouble (at least in my mind).    Hope you wrote a poem for this hilarious photo.

Here’s the photo I found for you for next Thursday when we get together again………….

Wheeee!    This isn’t exactly Thelma and Louise but these girls look like they’re having a great time.    We should have some fun poetry for this one.   We’ll find out next Thursday when we get together again.   In the meantime, please be happy and stay healthy………….
