Hello Hungry Bacon Lovers!
I’m back yet again with another really delicious recipe that has our favorite ingredient – BACON. AND I also have a guest Chef with me – Miss Penny from 15andMeowing whose Mom Miss Ellen was kind enough to have Penny bring the recipe to me so I could share it with YOU!
I don’t know if you all have made a frittata before but I know I have made them before here in my kitchen and they really are “the best of many worlds”. It’s like having a pie only not a FRUIT pie – this one has vegetables, cheese, green onions, and lots of other things but most importantly – BACON. Ready?
Bacon, Asparagus, Cheese Frittata
INGREDIENTS
- 8 slices of bacon, cut in 1-inch pieces
- 1 cup asparagus cut into 1/2 inch pieces
- 2 cloves garlic
- 10 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup heavy whipping cream
- 1/4 cup parsley, chopped
- 2 tablespoons chopped green onions
- 1/2 teaspoon salt
- pepper to taste
NOTE: We realize that asparagus might not be everyone’s favorite so here are some other low-carb veggie options to substitute for asparagus. You can also just leave it out. But not in the Royal Castle – we LOVE asparagus!
- Broccoli
- Spinach
- Kale
- Zucchini
- Avocado
INSTRUCTIONS

Preheat oven to 350 degrees and spray a 9 or 10 inch baking dish with cooking spray. It can be round or square.

In a medium skillet, cook the bacon until crispy. With a slotted spoon remove from pan and drain bacon on paper towels. Drain bacon drippings leaving about 1 tablespoon of drippings in the pan.

Cook asparagus in reserved bacon drippings for a couple of minutes or until desired tenderness (asparagus will continue to cook in the oven). Add the garlic and cook for an additional minute. Remove from heat and set aside.

In a large bowl, add the eggs, 1/2 the bacon, 1/2 the cheddar cheese, cream, parsley, 1/2 the green onions, asparagus, salt, and pepper to preference. Whisk together and pour into prepared pan.

Bake for 15-20 minutes or until egg is puffed and set in the middle. If you are using a 9-inch pan it will puff very high but will settle as it cools. Add the remaining cheese for the last couple of minutes of baking to melt. Remove from oven and sprinkle with remaining bacon and green onions. Serve!

WE LOVE ASPARAGUS, but…er…the aftermath is a bit formidable. Nice frittata but we’ll put the avocado on top, just for fun. We love asparagus with olive oil, mint, garlic and ancnovy dressing over it, but thanks you you Teddy, we’re adding crumbled bacon!

Try wrapping a slice of bacon around a stalk of asparagus, then bake till its crisp! That is YUM!

Oh yes – have done that many times – it is perfect and in fact you can do that with asparagus on a BBQ grill too!

Asparagus can be “daunting” for some but happily not here! Oh avocado on top would be good – avocado is ALWAYS good. LOL

That is a recipe we shall have to make after we finish this detox affair! But not when vegan son is here, LOL!!
We love asparagus, but I do think we’d prefer the broccoli or even spinach.

Sounds delicious! I usually substitute chopped cooked chicken for bacon, but I think this would be good without any meat. I love asparagus too!!

You can substitute just about ANYTHING for the asparagus – broccoli is particularly toothsome!! 🙂

Looks good, Teddy. Can the recipe be cut in half? Mom says that’s a lot of leftovers unless she made it for company. Nice to have penny as a helper in the kitchen. I’m sure you could make a small frittata with half a recipe…..My Mom LOVES leftovers for snacks and lunches, etc. reheated so the full size works for us. Penny is a GREAT assistant!

Hello Teddy and Penny! Penny, so nice to see you over here helping Teddy! Just got back from the Publix and they had no asparagus… ridiculous! The traffic was ridiculous too so I just came home with BACON… ain’t that a shame 😉 We love a good frittata! Thank you Teddy and Penny for this great recipe. I have checked your weather 3 times today and it always says FOG!

It was a very foggy, rainy, icky, yucky, WET day yesterday. Today we’re supposed to have SUNSHINE! That will make me happy. As for no asparagus – there ought to be a LAW that grocery stores MUST have asparagus!
