Bakin’ With Bacon and King Teddy

Greetings Fellow Baconians!

It’s Saturday – time for me to give you a recipe that has our favorite ingredient in it – BACON!    There is an endless number of recipes that include this wonderful item and I do hope you aren’t getting bored with bacon.    Seems like it would be impossible to me but – well – maybe I’m out of touch with my adoring public!

Anyway, here’s another one – this one is extra delish and my Royal Mom has made it a few times for the Royal Dad and it was APPROVED and given the “DELICIOUS STUFF” award by my parents.     That’s a pretty good recommendation in my book.

Caprese Chicken with Bacon

INGREDIENTS

  • 8 bacon strips
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 plum tomatoes, sliced
  • 6 fresh basil leaves, thinly sliced
  • 4 slices part-skim mozzarella cheese

DIRECTIONS

  1. Preheat oven to 400°. Place bacon in an ungreased 15x10x1-in. baking pan. Bake until partially cooked but not crisp, 8-10 minutes. Remove to paper towels to drain.
  2. Place chicken in an ungreased 13×9 inch baking pan; brush with oil and sprinkle with salt and pepper. Top with tomatoes and basil. Wrap each in 2 bacon strips, arranging bacon in a crisscross.
  3. Bake, uncovered, until a thermometer reads 165°, 15-20 minutes. Top with cheese; bake until melted, 1 minute longer.

 

Oh boy – now doesn’t that sound fabulous?   Fit for a King I’d say!     By the way, that photo of the finished dish above looks JUST LIKE it did on the plate when the Royal Mom made it!   MMMMMMMMMMM good.

  1. That looks delicious! I have a confession. They had it on one of the cruises last year and I ate it, bacon and all! I survived too 🙂 I don’t buy any type of pork or bacon because I know it could cause big problems, but I thought that small amount of bacon can’t hurt. I really enjoyed it too.

But she agrees with chickie instead and since I love chickie I’m encouraging Lynn to make this and share it (all) with me. I eat dry chickie ev-fur day and I think moist would be a nice change topped in bacon. Send me a smell-agram of yours Teddy. Precious

  3. You know I am a lover of bacon wrapped chicken breasts, example… the mushroom sauce recipe you posted. I am feeling very positive this is going to be a winner too. This will be Sunday’s comfort food dinner! I just need to pick up some mozzarella. Good Morning!

    • Oh goodie! Let us know how you like it – it occurred to Mom too that you could grill the chicken since you guys like grilling – that would add a little smokiness to the flavor and probably would be even YUMMIER!
