Ahhh….it’s bakin’ with bacon time!
Hi everyone. I hope some of you tried out one of the New Year’s Eve appetizers I suggested last Saturday. If not – they are good any time. My Mom and Dad can make a whole meal out of appetizers. This time around I’m giving you something my Mom and Dad have had for lunch – not an accompaniment to a lunch but actually the WHOLE lunch. It’s a swell side dish but also a MEAL on its’ own.
Cheesy Bacon Butternut Squash
Ingredients
- 2 lb. butternut squash, peeled and cut into 1″ pieces
- 2 tbsp. olive oil
- 2 cloves garlic, minced
- 2 tbsp. chopped thyme
- kosher salt
- Freshly ground black pepper
- 1/2 lb. bacon, chopped
- 1 1/2 c. shredded mozzarella
- 1/2 c. freshly grated Parmesan
- Chopped fresh parsley, for garnish
DIRECTIONS
- Step 1 – Preheat oven to to 425°. In a large ovenproof skillet (or in a large baking dish), toss butternut squash with olive oil, garlic and thyme. Season with salt and pepper, then scatter bacon on top.
- Step 2 – Bake until the squash is tender and the bacon is cooked through, 20 to 25 minutes.
- Step 3 – Remove skillet from oven and top with mozzarella and Parmesan. Bake for another 5 to 10 minutes, or until the cheese is melty.
- Step 4 – Garnish with parsley and serve warm.
Doesn’t this sound YUMMY? Looks yummy to me and I’m a cat! Butternut squash has always been a BIG FAVE of my Mom’s. I can understand why!

Teddy, Lynn loves butternut and buys one ever-furry week at the store. She uses it in vegan chili, baked, in curry, roasted and I just wish it was cat food!
I’ve never worn a hat like yours, you look handsome as a chef. Keep the recipes coming, cause I do like a bit of bacon on the side of crunchies. Precious

Every week I do a new recipe with bacon – sometimes I toss in something different but almost always it’s a “baconized” recipe! Glad it’s a fave at your house too!!

My mom just said to me that she will actually have to finally have that squash…especially made like THIS, Teddy. She never has. Seems she has missed a lot. Her Dad used to cook a variety of squash but I think he was not knowledgeable about how to make it tasty to a child…so Mom never had squash she really enjoyed. This recipe I believe would change her mind.

My Mom bakes it in the oven after cutting it in half and filling up the “seed hole” with butter and brown sugar until the squash is SUPER soft…….oh boy oh boy oh boy!

Never had butternut squash… this is going to change that! I think this would be good with a grilled pork chop, just seems to go together! Thank you, Teddy!

Oh yes – would be fabulous with a grilled pork chop and in fact you can roast butternut squash on a grill. We bake it in the oven here – Mom puts a big old pat of butter and some brown sugar in the “seed hole” and when it’s nice and soft and squishy and she’s getting ready to eat it she dips chunks of squash in the butter/sugar hole before she eats it! MMMMMMMMMMMMMMMMMMM!
