Bakin’ With Bacon for New Year’s Eve

Happy Almost New Year from Baconia!

Hello loyal subjects!    Tonight’s the big night – the ball will drop in Times Square and BOOM it will be the start of a new year.    The Royal Mom and Dad will be snoring away at midnight but there will certainly be plenty of party-goers out there celebrating.

I’m going to help those of you entertaining with a recipe (or maybe two) for appetizers to please your discriminating guests!   One of them uses spicy sausage which is a close cousin of bacon so it counts as something your King of Bacon would recommend!

Apple-Pecan Baked Brie (this is SOOOOO yummy!)

 

Ingredients

  • 1 tablespoon butter
  • 1 small tart apple, peeled and sliced
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • Dash ground nutmeg
  • 1 round (8 ounces) Brie cheese
  • Assorted crackers

Directions

  1. Preheat oven to 375°. In a saucepan, heat butter over medium heat. Add apple, cranberries, pecans, brown sugar, cinnamon and nutmeg; cook and stir 5-7 minutes or until apple is tender.
  2. Cut Brie horizontally in half; place bottom half in a 9-in. pie plate. Top with half of the apple mixture; replace top. Top with remaining apple mixture.
  3. Bake, uncovered, 10-12 minutes or until cheese begins to melt. Serve warm with crackers.

 

Easy Cheesy Sausage Biscuit Bites (oooh la la)

Ingredients

2 cans of Grands biscuit dough, total of 20 biscuits  (I know not everyone can get the cans of Pillsbury pre-made biscuits but if you make your own dough it works – it’s just easier with pre-made biscuits).

1 pound of breakfast sausage, your choice of flavor  (I used SPICY!)

1 cup Cheddar Cheese, freshly shredded

4 ounces cream cheese, softened

 

Directions

Preheat the oven to 400.    Cook the sausage thoroughly and drain fat from it.  Mix the cream cheese and the cheddar cheese together and stir in the cooked sausage.   Roll into 40 balls, not much larger than a walnut.  Remove the biscuits and separate in two layers, (Pillsbury Grands makes it easy to do).   Press one layer into a mini muffin cup.  Place a ball of the sausage and cheese mix into each muffin cup with the bottom biscuit layer.

Place in the oven and bake for 8 to 10 minutes, until golden and bubbly.

To your recipes add one PARTY and you’ve got New Year’s Eve wrapped up!
