Hello and Welcome To Castle Baconia Kitchen – Memorial Weekend Edition!
Yes I thought I’d red/white and blue it today because Monday is our official holiday for Memorial Day. I’m patriotic because Mom brought me up that way and her Dad brought HER up that way. Sometimes it makes us sad to see the things that happen here in our country BUT every country has tough moments. We are proud to be living where we are in the land of the free and the home of the brave.
Now let’s talk FOOD because that’s why we’re here in the first place! This recipe today is for one of just about everyone’s favorite things – PIZZA! Only of course since it’s MY kitchen I’m going to add bacon as a main ingredient. It also uses one of my Mom’s fave veggies – asparagus. So what’s not to love??
Hope if you’re a pizza lover you’ll give this a try. These days making pizza is even easier because you don’t HAVE to make your pizza dough from scratch. The recipe we gave you a couple of weeks ago for stromboli (from Miss Ellen at 15andMeowing) is another example of how to make a recipe with an already made pizza dough. So are you ready for another yummy recipe? GOOD!
Bacon, Asparagus, Goat Cheese Pizza
INGREDIENTS
- 5 thick slices bacon, cut into 1 inch pieces
- 1 unbaked pizza crust
- 1 pound shredded mozzarella cheese
- 1 cup chopped fresh asparagus
- 1 cup halved cherry or grape tomatoes
- 1 (11 ounce) log fresh chevre (goat cheese) (I’m sure other cheese would work but goat cheese is just plain DELICIOUS in this recipe!)
- 1 teaspoon red pepper flakes
- freshly ground black pepper to taste
DIRECTIONS
- Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Place bacon in a skillet over medium-high heat. Cook for a few minutes to release most of the grease, but do not cook until crisp. Remove to paper towels to drain.
Step 3
Spread the pizza crust out on a pizza pan or large baking sheet. Top with mozzarella cheese, bacon pieces, asparagus, and tomatoes. Dot with goat cheese, then season with red pepper flakes and black pepper.
Step 4
Bake for 15 to 20 minutes in the preheated oven, until the crust is golden brown underneath when you lift it up to take a peek. Let cool for about 5 minutes before slicing and serving.

Oh, we are so stricken by Uvalde and the incompetence of the law enforcement that did not respond and the children lost. We have a grandson marrying today and will try to concentrate on that and your wonderful recipe. Mama makes pizza every Sunday night.

We are all beyond upset about Uvalde….there is just no excuse. We pray constantly for our country to learn some lessons about guns believe me. We know you have a pizza night – this might soothe the soul as it’s delish.

Pizza!! Wow, that cheeseyness is compelling me to want some!! Bacon is a bonus! Lets see, use a cauliflower crust which mixes that with cheese and s few other things, then proceed with your recipe! Mmmmmm!

I love asparagus and goat’s cheese. I usually use diced cooked chicken in place of bacon. It works for most things. Saturday mornings always used to mean bacon sandwiches and I really miss them.

Yum. I’ve never had goat cheese, but perhaps I should give it a try!

IT’s a lovely cheese but people who have a “particular” idea of what cheese should taste like might find it too different for their taste. Goat cheese is soft and creamy in texture with a tangy but still buttery flavor and an elegant aroma. We don’t have it often because we love cheese and there are SOOOOOOOOOOOOOO many kinds of cheese to try, but goat cheese is delish on crackers as well as in recipes!

Yeah I know what you mean……all that stuff together almost makes you throw caution to the wind but you shouldn’t that’s for sure………just go ahead and salivate. LOL
