Hello Bacon Fans and Welcome To My Kitchen!
Ready for another baconized recipe from the Castle Baconia’s cookbook of delightful treats? Well good because I have one for you. As always. Would I let you down? This probably sounds a little weird because of the combination of ingredients but TRUST ME………it’s a tasty treat. It involves the SWEET/SALTY combination of peaches and bacon and oh boy is it incredible in this recipe!
Linguini with Bacon, Peaches & Gorgonzola
INGREDIENTS
4 servings
One 12-ounce box linguine
1 tablespoon extra-virgin olive oil
6 ounces bacon, chopped
2 shallots, chopped
1 peach, thinly sliced
¾ cup crumbled Gorgonzola cheese
2 tablespoons fresh thyme
DIRECTIONS
1. Cook the linguine in a large pot of salted boiling water until tender, 8 to 10 minutes. Drain, then toss the linguine with the olive oil.
2. In a large skillet, cook the bacon until crisp, 5 to 6 minutes. Remove the bacon from the pan and cook the shallots in the bacon fat until tender, about 2 minutes.
3. Add the peach slices and cook until tender, about 4 minutes.
4. Add the pasta and bacon back to the pan and toss to combine. Add the Gorgonzola and toss until just combined. Garnish with thyme.
Gorgonzola is a different cheese – very tasty but probably not a cheese you would normally find in your refrigerator! We got it at our local grocery store and you probably can too.
It’s always fun to try a recipe you may NEVER have thought of making – and this gives you a chance to do just that………….!!

That sounds tasty! We often have Gorgonzola with crackers on a Sunday evening. I love when peaches are in season.

I wondered how this really would be but the bacon and peaches were amazing – add the cheese and OOH LA LA!

Bet you could make a great grilled sandwich from those ingredients minus spaghette/linguini. Might be a little messy… Mmmm!

That looks delicious. My wife makes something similar but used cherry tomatoes instead of peaches.

Tomatoes are yummy with linguini, bacon and cheese too….peaches sounds weird but that sweet/salty combo is really tasty.

A local restaurant, long since closed, used to serve a chicken and peaches dish. It was the best. Don’t remember bacon but maybe. Fruit mixes well in main dishes! Love my chicken salad with grapes. Without them, it’s kind of blah!

I agree about fruit being a great extra……I love chicken salad with cranberries. Very tasty too – I’m sure I’d love grapes (or raisins) as well!!

This recipe really is quite different, but our mom and dad like anything with Gorgonzola. Dad uses it when he makes risotto. Mom we’ll have to see if she can get him to make this. I know it sounds weird but my Mom LOVES peaches and gorgonzola and who doesn’t like bacon (!!) – together with the linguini it was “rather heavenly” (Mom’s words).
