Bakin’ With Bacon and King Teddy

It’s ME!  Your King of Bacon!

Time for us to gather together and learn about another wonderful recipe using our favorite thing……………BACON!      This one involves one of my Mom’s FAVORITE vegetables – asparagus.   She just loves fresh asparagus and they have it in our grocery store ALL THE TIME so she rarely has to resort to canned.    Just a whole different thing when it’s fresh.    So if you are a fan of asparagus – stay tuned.

Fried Asparagus With Bacon

INGREDIENTS

  • 3 slices bacon, chopped
  • 1 ½ teaspoons butter
  • 1 pound fresh asparagus, trimmed
  • 1 shallot, thinly sliced
  • 1 pinch salt, or to taste
  • 1 pinch ground black pepper, or to taste
  • 1 tablespoon grated Parmesan cheese

Directions

Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.

Melt butter in the same skillet.

Cook and stir asparagus and shallot with salt and black pepper in melted butter and bacon. Cover skillet and cook, stirring occasionally, until asparagus are tender, about 5 minutes.

Transfer asparagus mixture to a platter. Sprinkle with Parmesan cheese.

 

Now all you asparagus-a-holics out there – doesn’t this sound totally delicious?    Well give it a try some time.    Nice fresh asparagus is such a great treat.

  1. I have eaten asparagus occasionally, and like it. But I’ve never cooked it. Will have to give this a try – it does look yummy! With bacon, how can you go wrong??!!
