Hello Bacon Lovers! Welcome to the castle of bacon…..!
Let’s see if you like the recipe I have for you today. Mom made a big batch of fried chicken the the other day and had leftover chicken breasts so made this really yummy chopped chicken salad with bacon. You’re gonna love it.
BACON CHICKEN CHOPPED SALAD
Ingredients
- 1 package (22 ounces) frozen grilled chicken breast strips (we used leftover cooked chicken breasts and just cut them into strips)
- 1 cup crumbled blue cheese
- 3 tablespoons white wine vinegar
- 1 tablespoon water
- 1/8 teaspoon coarsely ground pepper
- 1/4 cup canola oil
- 8 cups chopped romaine
- 3 medium tomatoes, chopped
- 6 bacon strips, cooked and crumbled
Sounds good doesn’t it? My Mom is a nut for chicken salad sandwiches and this just works with all the delicious stuff in it…………blue cheese is one of her fave cheeses too. It’s a WIN/WIN here in the Castle and I hope you’ll give it a whirl too…………..yummy in the tummy!

Oh, yes, we love chicken salad but with olive oil since we are all addicted to it and it’s GOOD for you, too. Love the salad with blue cheese! Off to find chickn breasts to have leftover, haha. It would be an honor to have you be my sous for a day on a Saturday. Wouldn’t that be fun? If you have a FAVORITE bacon-ized recipe you’d like us to make together, send it to my Mom OR we can find one in the amazing cookbook your Mom sent to my Mom. I am always happy to have a pretty lady help me out in the kitchen!!!!! This chicken salad is of course “changeable” with olive oil or any other yummy stuff your Mama would like to add. Recipes are guidelines (as your Mama knows!)……….we can always be creative with recipes.

Teddy, you are the cutest Baking King we have ever met and that salad looks delicious but our Momma would probably use Goat Cheese instead of Blue Cheese. PawPaw would love the Blue Cheese, though. Have a Happy Caturday!

We got 3″ of powdery dry snow. Someone just came zooming by the side of the house on skis.
Very cold today but the snow is over. I thought of David this morning. Lo and Behold the leaf blower was quite effective getting the dry snow off the front porch, steps and a portion of the side walk.
Any thicker I don’t think it would work but at least we have clear path to the snow in the driveway which will be easy to walk on .

Oh yes – when it’s powdery stuff a leaf blower works just dandy! Glad it wasn’t one of those WET HEAVY snows like we get up here. Our snow is still sort of hanging around in many spots and what IS hanging around is ICE now. Be careful out there!! Glad you like the recipe.

I love salads Teddy. I would have to replace the meat with tuna, but that would work. I’ve never tried blue cheese, sounds delicious. Thanks for the recipe.

Oh yes – this would make a terrific tuna salad too. Bleu cheese is yummy – but you might ask to try a bit before buying it !!

We frequently buy chicken tenders at the deli and slice them and throw them in salads. SSNS loves bleu cheese, I am a ranch dressing peep. Add the bacon and we are good to go! Cartoon… LOL! Thank you, Teddy!

Oh this is delish with ranch dressing………….actually Dad tried honey mustard dressing and liked it so I think ANYTHING goes!!!!

Yum! With a sub of avocado oil for Canola and no tomatoes, those being no nos on an anti-inflammatory diet…well, and using cheddar or the like instead of blue cheese which I do not care for…oh dear I think I have an entirely new recipe! LOL!
Come to think of it, bacon. isn’t good for me either…sigh…but I guess the less my joints ache and swell, the better!
Still, its good to cheat sometimes:)
