Greetings and Salutations! Welcome to the kitchen where magic happens with BACON!
Today I have two guests – sisters Shoko and Tyebe from Canadian Cats blog and if you need a bacon fix, these girls have the answer!
Toasted Bacon and Mushroom Sandwich
(photo courtesy of Shoko and Tyebe’s Mom)
INGREDIENTS (for one sandwich)
2 pieces of bread, toasted
3 pieces of crisp bacon
4 good sized mushrooms
mayo, salt and pepper to taste
INSTRUCTIONS
In a frying pan brown the mushrooms. I add a bit of water and a dab of butter instead of piling on the butter. You only need a little butter to brown the mushrooms. Remove the mushrooms when browned and put them on a paper towel to absorb the excess water. Then put the bacon in the skillet. Meanwhile, toast the bread. Butter and put mayo on the toast. When the bacon is crispy and the mushrooms browned and patted dry with a paper towel lay the bacon and mushrooms between the two pieces of toast. If you want to add more “stuff” you could put slices of tomato on the sandwich for a Bacon/Mushroom/Tomato sandwich (BMT).
Hey, that sounds yummy! Maybe on some keto bread! Hmmmm, I could eat some right now…maybe not, I have to sleep well, work is on for me this weekend.
Thanks Shoko and Tyebe!

Now, that’s a recipe we LOVE…simple and delicious. Mama would sprinkle a few drops of brandy on those babies…or in the pan and light it to burn off the alchohol. And we LOVE the Canadian blog, having never seen it. But we have never seen so many blogs. I wish we had more time. It would take weeks to see all the ones we wish to see! Darn. But little by little….
