Happy Bacon Saturday friends! Let’s COOK!
Today’s recipe is one that I THOUGHT I’d shared with you before but when I did a “search” on my bacon posts it didn’t pop up. SO, even if I have done it for you before, I think we all need reminding about some of the incredibly delicious combinations that are tastier than they sound. Like for instance who would think of putting bacon and bleu cheese together????? Well, I did and apparently a lot of others did too! Wanna try it? Good. Let’s do this………..
BACON AND BLEU CHEESE POTATO PANCAKES
Ingredients:
- 4 slices bacon
- 2 pounds potatoes, cubed
- ⅓ cup crumbled blue cheese
- ¼ cup 1% low-fat milk
- 1 egg
- 3 green onions, thinly sliced
- ¾ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ cup bread crumbs
- 1 ½ tablespoons olive oil
- 1 tablespoon butter
Directions
- Step 1
Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until browned and crisp, about 10 minutes. Drain on paper towels; chop into smaller pieces.
- Step 2
Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and return to the pot; mash slightly.
- Step 3
Stir bacon, blue cheese, milk, egg, green onions, salt, and pepper into the pot; mash mixture with a potato masher to desired consistency. Cool slightly, about 5 minutes.
- Step 4
Pour bread crumbs into a shallow bowl. Shape the potato mixture into twelve 1/2-inch thick cakes; dredge in bread crumbs.
- Step 5
Heat olive oil and butter in a large nonstick skillet over medium heat. Add 4 potato cakes; cook until browned, about 2 minutes per side. Repeat with remaining potato cakes. Cover and keep warm.
Doesn’t this sound delish? Well the ROYAL MOM thinks so – not only is she a potato pancake nut she is also a bleu cheese nut (in fact so is the ROYAL DAD!). So of course we had to try this one out on the parents and oh boy oh boy it was a BIG HIT.
So what are you waiting for? This might be a good addition to your Labor Day Breakfast on Monday!
That does sound very yummy…for Pawppy! Petcretary hates blue cheese, LOL! Maybe sharp cheddar or some other tangy cheese might be a good sub.
Wonder if one can shred a jimcana and use that instead of a potato? Um…or even cauliflower?? LOL!

I love potato pancakes with just about anything (but bleu cheese). Everything takes better with bacon!

I made potato cakes last night from leftover mashed. My meat eater husband is always amazed at how good a potato mash-up is. He likes them even better than plain mashed.

Teddy I’m happy to report we had breakfast for supper last night the star was Bacon.

We are not fans of bleu cheese, but bacon inside a potato pancake is brilliant! What a chef!

They sound very tasty! I would have to put extra blue cheese in to replace the bacon! Actually I would probably replace it with chopped broccoli.

This recipe sounds delicious Teddy! But alas, they will not be on our menu. Alex is allergic to potatoes and Mom is allergic to blue cheese.
We will be having Bacon tomorrow! Mom is going to make the Bacon Quiche Tarts you guys did a few weeks ago. Mom is going to make them and freeze them for suppers/lunches. She will not be around much over the next 2 weeks. Mom is working as the registration person at the advance polls and an Election Officer for the regular voting day for the Canadian federal election. We may not get to comment, but we will be reading!

The moldy cheeses are a love it or leave it proposition, your Royal Parents love it, and so does my Sweetie, but i can leave it. That’s okay, there’s room for making two half batches, one with bleu, and one with something else…

That’s what I thought too – those of us waiting to do some of these snacks on a COOL day hope we don’t have to wait tooooooooooo long for days like that. I’m kind of tired of hot and humid!
