Bakin’ With Bacon and TWO Chefs!

Greetings from the Castle Kitchen…..I have Assistant Chef SammyP with me today!

Why?   Well not only is he a good friend of your King’s BUT his Mom supplied us with a fabulous baconized recipe and SammyP is giving me a hand (paw) so I make it according to the recipe.     It’s also a very tasty recipe so we of course hope you will TRY it!    I’ve given you all some maple bacon bread goodies before but this is DIFFERENT – trust me!

Maple Bacon Cheddar Biscuits

INGREDIENTS:

  • 8 slices bacon, diced
  • 4 cups all-purpose flour
  • 1 cup shredded extra-sharp cheddar cheese
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter, frozen
  • 1 1/2 cups buttermilk
  • 6 tablespoons maple syrup, divided
  • 2 tablespoons melted unsalted butter

DIRECTIONS:

  1. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.
  3. In a large bowl, combine bacon, flour, cheese, baking powder, salt and baking soda.
  4. Grate butter using the large holes of a box grater. Stir into the flour mixture.
  5. In a medium bowl, whisk together buttermilk and 4 tablespoons maple syrup. Add to the flour mixture and stir using a rubber spatula until a soft dough forms.
  6. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 12 rounds using a 2 to 2 1/2-inch biscuit or cookie cutter. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes.
  7. Remove biscuits from freezer. Place into oven and bake for 15-18 minutes, or until golden brown.
  8. In a small bowl, whisk together remaining 2 tablespoons maple syrup and butter.
  9. Serve biscuits warm, brushed with the maple-butter mixture.

  1. SSNS is going to be on this recipe! Sounds delicious. I was going to say something about making gravy but I think it would ruin the wonderful taste of the biscuits BUT you never know. Thanks to SammyP and his Mom! And Teddy, you did a great job working together with SammyP! Thank you for this recipe… you know how we love biscuits and gravy here at the Casa!

    • Oh my Mom is a MAJOR biscuits/gravy girl too. She also loves creamed chipped beef and biscuits but that’s another story. SammyP was a great help AND after all, his Mom provided us with this fantabulous recipe! I hope SSNS fixes this for you – it’s “fantasmagorical” !

  2. This has GOT to be delish. Mom would skip the maple syrup because she was left out when they passed out the “loves maple flavor” gene.

    • You’re right about this – HAS to be good…..and skipping the maple syrup no biggie….the rest of the ingredients are so spectacular- well – you know…..I wonder if honey would be good……

  3. For sure the bacon and cheese are yummy, but our favorite part of this recipe is mixing together the milk and maple syrup to pour in. Whoa! Plus, Mom said, “S and T, you had me at BISCUITS!”

    • Well we sent some goodies home with SammyP so if you didn’t get them – they must have “DISAPPEARED” before he was able to give them to you. Never totally trust a cat. Even Sammy!

  5. Our dad makes great biscuits, but these sound way better. Mom says she is going to ask him to make them tomorrow. We thought the recipe might be corn wrapped in bacon with SammyP assisting.   6. Sammy P is one cool cat! We love it when he shows up on the blog! We shall stop by and ask him of we can make the Biscuits with gluten free Bisquick (sigh, brother Alex is allergic to gluten besides tomatoes). Maple and bacon and cheddar is such a GREAT combination! Thanks for sharing Bacon King!

    • I imagine the biscuits would be just as good using Bisquick of ANY kind. I even thought of that AFTER we went to all the trouble to do the from scratch thing! I say GO FOR IT!
