Bakin’ With Bacon and King Teddy

WOO HOO! We all made it through New Year’s Eve and now we’re into a brand new year.     Today I’m going to give you a recipe for something really REALLY good.    Ready?

Bacon Mushroom Spinach Frittata

 

INGREDIENTS:

  • 5 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Dash of hot sauce (optional but awfully darn good!)
  • Kosher salt and freshly ground black pepper, to taste
  • 4 slices bacon, diced
  • 2 cloves garlic, diced
  • 8 ounces cremini mushrooms, thinly sliced (any type of mushrooms will work!)
  • 2 cups baby spinach
  • 1 Roma tomato, diced

DIRECTIONS:

  1. Preheat oven to 425 degrees F.
  2. In a large bowl, whisk together eggs, milk, basil, oregano, thyme and hot sauce; season with salt and pepper, to taste. Set aside.
  3. Heat a large oven-proof skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes, reserving 1 tablespoon excess fat. Transfer to a paper towel-lined plate.
  4. Add garlic and mushrooms to the skillet, and cook, stirring occasionally, until tender and browned, about 3-4 minutes; season with salt and pepper, to taste.
  5. Stir in spinach and tomato until the spinach begins to wilt, about 2-3 minutes. Stir in egg mixture and bacon, reserving 2 tablespoons, until well combined. Cook, undisturbed, until edges are set, about 2 minutes. Top with remaining bacon.
  6. Place into oven and bake until top is set and golden brown, about 14-15 minutes.
  7. Serve immediately.

 

This is so darn good.     I don’t often make frittatas or even THINK about making them, but they sure are tasty and once you get the idea, you can make them out of almost ANYTHING!    My Mom and Dad are BIG on breakfast.   It’s the most important meal of the day you know!    With all the goodness in this meal, it will make you wish you could have it every single morning – hey – why not?    HAHA

      • It’s very cold here. We’ve had a dusting of now a few days ago and heavy frosts that have lasted all day. The bipeds are complaining that the paths are slippery! 😀

        • Uhoh….well, you wouldn’t want the bipeds to take a tumble now would you! Best just wait for that ice to melt then you can safely take them for a walk – oops – I mean THEY can safely take YOU for a walk! 🙂

  1. Oh geez, I can get on board for this! I love frittatas…. and sit yourself down… wait for it… I am the frittata maker in this family of two!!!!!!!!!!!! SSNS not allowed in the kitchen when a frittata is being made. I have everything to make this wonderful recipe BUT the dang mushrooms and I had an experience with good old button mushrooms a week ago that was so ICK that I don’t know if I can ever buy another mushroom again. So your recipe will be mushroomless for us. Cremini shrooms might be safe… I will have to look at them. In all my cooking years and that’s a lot of years I have never had an issue with a button mushroom. It has to be because they have to hang around in FLORIDA grocery stores… ICK… just ICK!

    • Oh sorry you had a mushroom incident but I can understand why you’d give them a wide berth in the grocery if that happened! As you know since you are Madame Frittata you can make these delightful meals out of ANYTHING so go for it! They sure are delicious ways to clean out the refrigerator!

  3. Oh YUM! We LOVE Frittta, this recipe sound terrific!
    We have not yet made the Apple Scalloped Potatoes. We are going to make it when we have the ham on Ukrainian Christmas! We got some great salmon that we had for New Years instead.
    We all got salmon on Friday, it was delicious!

  4. Sounds great, Sire, and i wish i could oblige you and serve it here soon, but Sweetie doesn’t much eat eggs (after an unfortuate incident in which he was pelted with rotten ones as a child). Although i will promise to share it with someone who loves eggs, my son.

    • Oh how sad about your Sweetie when he was a little guy….that’s incredibly mean but I sure can see why he’s not a FAN of eggs. Anyway, you and your son could (and would) enjoy this frittata – it’s dy-no-mite!
