Oh yeah! Saturday is BACON DAY! Ready?
We’re making a trip to “low country” this morning for this delicious dish I’m going to show you. My Mom and Dad just got back from an overnight at a VERY beautiful country Inn and the Chef was from Lousiana – one of the breakfast items available was very similar to this recipe. It’s better for lunch or dinner but – well – it was tough for Mom and Dad to resist ordering it for breakfast since it was on the menu so they did!!!
Shrimp and Cheesy Grits With Bacon
INGREDIENTS
1-1/2 cups chicken broth
1-1/2 cups evaporated milk
3/4 cup quick-cooking grits (yes I know these aren’t available everywhere but if you CAN find them – PERFECT – if not – well – I’m so sorry!!!!)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (plus one extra tablespoon of shredded cheese for topping when it’s all done!!)
1 cup chopped raw bacon
2 tablespoons bacon drippings
1 pound uncooked medium shrimp – peeled and deviened
1/2 cup diced green bell pepper
1/2 cup diced onion
Directions
Bring chicken broth and evaporated milk to a boil in a large saucepan; stir in grits and salt and return to a boil. Reduce heat to low, cover, and simmer grits until thick, stirring often, about 5 minutes. Stir in 1 cup Cheddar cheese until melted. Set grits aside and keep warm.
Cook and stir bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer bacon to a bowl. Drain all but 2 tablespoons of bacon drippings from the skillet and cook and stir shrimp, green bell pepper, and onion in bacon drippings until shrimp are bright pink and no longer translucent inside and green pepper is tender, 5 to 8 minutes. Stir bacon into shrimp mixture.
Spread grits into a serving dish, top with shrimp mixture, and sprinkle with 1 tablespoon Cheddar cheese for garnish.
I wish I could say that I can think of a good substitute for grits in this recipe – maybe rice? Not sure about that but I think that would work. Grits are one of those things my Mom says she just FORGETS about but this dish was one of her and Dad’s faves when they used to eat at one of the restaurants in our town (pre-pandemic). Shrimp with Grits – talk about delish!!!!!!!

I don’t think I can make an auto-fill-in but I’ll see what I can figure out! It is annoying – we have to do that every time with about six or seven of the blogs we follow too. Some of that is relatively recent too so not sure what changed with some blog platfrms!!!!! BLTS – a big fave here.

It was a lovely experience to be so pampered after months of being “shut-ins” !! This really is a delicious meal but I know lots of people don’t like shrimp – David and I are “shrimp-a-holics” – and Teddy enjoys munching on those tiny salad shrimp too!

I love shrimpies but about 20 years ago, I developed an allergy to them. That did it for me. But looking at the recipe can be enjoyed, at least, over here at my house. XO you guys. Have the best weekend too and Teddy..tell they you want our to play. There may be a few leaves down.

We do have a few leaves coming down but Mom and Dad say it’s not because it’s Fall, it’s because the trees are all stressed out from the HEAT! Anyway, a leaf is a leaf right? Soon I’ll have PILES of them!!

Yes my Teddy knows when I have shrimp out for a meal – I whack one or two up into little pieces and he takes his time and savors every bit in a bowl!

A favorite meal for my Mom and Dad when they were eating out – soooooooo good! The version they had at the Inn had hot andouille sausage in it and a spicy red pepper sauce on top of the shrimp and grits.

Mom and I have never tried shrimp and grits. But any recipe that has bacon AND bacon grease is all right with me! Yum!

Probably no grits there but you could order some online…..instant grits are super easy to make too. So good!

Can you believe our peeps have never had grits??? We hear they are wonderful. Mom loves bacon-wrapped shrimp, so we just know she would enjoy this recipe.

The mom is always looking for ways to use shrimp when she cooks. This is a great recipe she will try. Rice would probably work.

I think rice would be fine……it’s tough to find grits everywhere but here in Virginia it’s pretty common!

I love shrimp and grits! My mom was from New Orleans, La, and she made the best grits. My dad was from Detroit, Mi, and put sugar on his grits! OMC, what a way to ruin grits and now, my husband does the same thing. Sigh.

We love shrimp and grits too but my Mom used to put sugar on them when we were kids – her way of getting us to LIKE them initially I think. These days no sugar but I still love grits!

These grits were different from any others Mom and Dad have had – they were LARGER and cheesy……..still it was too much for breakfast!
