Hello Friends! Hope things are good for all of you – all is well in the Baconia Castle kitchen to let’s get to cookin’ !!
It’s entirely possible I’ve given you this next recipe once before – after all – who doesn’t like German potato salad???? Well this of course has a lot of bacon in it so it makes it extra tasty, but over and above that, it’s got that tartness that’s a nice addition AND you serve it warm which is pretty different from the “usual” potato salad. Mom makes this when Dad grills bratwurst out on the BBQ.
Bacon Lovers German Potato Salad
Ingredients
2 pounds Yukon gold potatoes
1/2 pound thick-cut bacon
3/4 cup finely chopped onion
1/3 cup white vinegar
1/4 cup sugar
1 tablespoon Dijon mustard
1 teaspoon salt
2 tablespoons minced chives, for garnish
Directions
- Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes. Drain and slice into 1/4-inch rounds.
- Cook the bacon in a large skillet over medium-high heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. Turn the heat to medium and add the onion. Cook until translucent and just beginning to brown, about 4 to 5 minutes.
- Whisk in the vinegar, sugar, mustard, and salt and stir until thick and bubbly. Add the sliced, cooked potatoes and toss to coat. Top with the crumbled bacon and garnish with the chives. Serve warm.
Now that I’ve given you the recipe – I want some. Well, Mom does anyway and I’m sure Dad would too. Me? I have to settle for my cat food! Oh well………….such is life for the Chef of the Castle Baconia (who just happens to be King!).
That sounds tasty. I have never made warm potato salad, just the usual cold one.

I think German potato salad is the only one I’ve ever had warm – somehow it really manages to taste better warm – it’s just so nice with grilled sausages!

On that search button I asked for… hahaha… I found it twice besides today’s post! One was with the Traveling Chef and the other was for LUNCH on The Teaser!!!! Good Morning, Virginieeeeeeeeeeee! I want some Bacon Lovers German Potato Salad right now for breakfast. We like our regular potato salad right after we have mixed it up in the bowl and it is still warm. It is easy for us to eat half of it just by tasting it to make sure it’s just right.

I love potato salad – always have…..after the first day when I can have some right after I’ve made it and it’s warm, I will microwave some to heat it up again because I LOVE LOVE LOVE it warm too!!

I’m not a fan of mayo so I make a version of this all the time. I throw in celery for crunch and a hard boiled egg or two. Our family has an old recipe but the family secret is to always double the bacon otherwise it’s just potato salad! 🙂

Double the bacon is a good idea in any recipe that calls for it as an ingredient (well I think so anyway!!!!!).

Meowser this sounds delicious! The only thing I plan to alter is using apple cider vinegar … in our family, we use the basic white vinegar for cleaning and the balsamic or apple cider for food.

this does look quite scrumptious. I have never tried warm potato salad. BUT anything is good with bacon. We are actually having potato salad, and brats for supper. Technically I think the German way to it pot. sal. is warm.
