Greetings food lovers! As you probably know by now, our friends the Canadian Cats and Easy Weimaraner blogs are united in presenting once a month a delicious recipe – each month something DIFFERENT………………..this month we are celebrating SALADS!! You know – that stuff we go outside to munch on once in a while? I am a fan of nice green grass but my Mom likes a salad with more interesting ingredients. So I’m sharing HER recipe today……………Her MOST FAVORITE salad!
Endive Salad
INGREDIENTS
Salad
- 4 heads Belgian endive
- 1/4 cup cranberries, dried
- 1/2 cup California walnuts, coarsely chopped
- 4 ounces Roquefort cheese, crumbled
- 1/2 cup Roquefort dressing, (OR bleu cheese dressing – both delish on this salad!)
DIRECTIONS:
- Trim the base of the endive then separate the leaves.
- Toss the cranberries, nuts and Roquefort together in a bowl, being careful not to break up the Roquefort too much.
- Spoon the mixture into the endive leaves.

That sounds very tasty! I have all those ingredients apart from the cranberries, but I am not very keen on any dried fruit so I would leave them out anyway.

I’m sure (and have seen recipes) that the fruit isn’t necessary – it’s interesting though what a little bit of “sweet” does to this salad. I LOVE LOVE LOVE endive!

I love the addition of dried cranberries and I always have those in the pantry since I use them in my biscotti!

VERY VERY VERY VERY good…..my favorite all time salad. I use bleu cheese but I guess roquefort is the “traditional” one.

It’s a funny looking green but VERY tasty……you can also cook it and eat like a regular veggie like spinach. I just like it crunchy in a salad.

Doesn’t stay pretty too long in my house – we whack it up into bite size bits and eat it – it’s just so yummy. Pretty is nice for presentation but not practical for EATING! HAHAHA

Good question……probably they don’t but probably the California walnut people paid someone to include THAT TYPE WALNUT in their recipe!!!

I had this salad in a restaurant a few years ago and have been hooked on endive ever since………LOL

Hmmm, never had anything like that befoie. Looks like something pawppy would love, he’s into those kind of cheeses…petcretary. not so much…MOL! Maybe it would still be yummy with ‘regular’ cheese and a yogurt dressing?

I’m sure it would be good with other dressings – the roquefort or bleu cheese are kind of tangy and I think that’s why it’s good – the dried fruit is that little tough of sweet and the nuts are the crunch…..it’s amazing how well these ingredients go together and endive – LOVE IT!

Endive is an unusual looking item – but in the lettuce/salad fixings type area of the grocery – just doesn’t look like it belongs there! LOL Very very tasty though.

It really is tasty…..the right mix of ingredients that some folks might think can’t work but it seems to work BEAUTIFULLY (and tastily….yeah that’s not a word but it describes this purrrfectly!)
