Bakin’ with Bacon and King Teddy

Your King of Bacon is here with another delicious bacon-ized recipe!

Who doesn’t like quiche?   I see no hands raised in the crowd – so you must be on the same page as my Mom and me – quiche is a wonderful meal no matter what time of day you have it.    This one is TRULY simple – not a lot of ingredients – but one of the most important ingredients is – BACON!

So roll up your sleeves – put on your apron and let’s do this!

Bacon and Swiss Quiche

 

Ingredients

One 9-inch frozen pie crust – thawed

1-3/4 pounds sliced bacon (or use the whole danged thing!)

3 eggs lightly beaten

1-12 oz. can evaporated milk

1/2 teaspoon spicy brown mustard

1/4 teaspoon ground nutbeg

1/2 cup all-purpose flour

1-1/2 cups shredded Swiss cheese

 

Directions

 

  1. Preheat oven to 350 degrees F (175 degrees C). Prick bottom and sides of pie crust and bake 10 minutes, until lightly brown; set aside to cool.
  2. Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain, crumble and set aside.
  3. In a bowl, mix eggs, milk, mustard and nutmeg. In a separate bowl, toss bacon with flour to lightly coat. Spread 3/4 bacon mixture and Swiss cheese over bottom of pie crust. Pour egg mixture over bacon mixture. Top with remaining bacon mixture.
  4. Bake 1 hour in the preheated oven, or until a fork inserted in the center comes out clean. Cool 10 minutes before serving.

Absolutely!  No doubt about it – this is beyond yummy in the tummy!

Anyone who can’t have bacon – just FYI this is really good with chopped chicken, or ham, or even some of your favorite vegetables (suggest sauteeing them first though to soften).   It’s pretty much an all around quiche recipe but this one focuses on having a LOT of bacon in it which is our favorite thing here.

Before I go, I just learned this morning that one of our good and dear friends has flown to the Rainbow Bridge while lying in his Dad’s arms.   Buddy Budd just turned 20 and was the Grandpa at TimmyTomcat blog looking after Dad Pete and the other kitties for many years.   You can click HERE to leave a message for them.   Buddy Budd was definitely one of a kind…………he will be missed.

    • Yes – excellent for a party – most people just need a little wedge of something like this to be satisfied. Rich………… Yes indeed, Buddy Budd was absolutely an elder statesman in cyberspace who was kind to all and loved his family. We will miss him.

  1. That reminds me just how much I love egg, cheese and bacon quiche. I will try your suggestion with veg instead of the bacon giving the chopped veg a quick blast in the microwave first. Chopped carrots, peas and sweetcorn comes to mind.
    I don’t eat any pig related meat now, and the thing I miss most is belly pork with lovely crispy crackling!
    I seem to be living on chicken cooked in various ways and salmon. It gets boring after a while.

    • I bet it’s tough trying to do interesting variations with just chicken and salmon. Can you eat shrimp? Lots of delish things to do with shrimp! I think this would be good with just about ANYTHING in it really. It’s a pretty generic recipe.

      • Yes, I can eat shrimp. It is meat that I have to be careful of, and also cream. Pork is a big no! Other meat I have to be careful to remove all fat and we all know that is where the flavour comes from. 😦

  3. This does sound yummy. Mom makes a crab quiche, and has never tried making any other kind. Seems to us she needs to step out of her comfort zone. Thanks for another winner, Teddy!     • Well that is one of the BESTEST quiches ever – but the cool thing about quiche is you can kind of put any ingredients in the basic recipe that you want and it’s delicious. Mom makes a good ham/asparagus quiche and who’d have “thunk” that would be good?!?!?! HAHA
