Here I Am – The King – With A Super Recipe For You!!
Greetings loyal subjects……………today I have something different for you but that doesn’t mean it contains NO BACON…….to the contrary it contains a lot. It’s also something that the ROYAL MOM adores – roasted vegetables but with a bacon “twist”! Intrigued? Good……………you might want to try this one.
Oven Roasted Vegetables With Bacon
Ingredients
- 2 cups baby carrots
- fresh broccoli
- 1 large sweet potato
- 1 large russet potato
- 1 green bell pepper
- 1 red bell pepper
- 1/2 red onion
- 6 cloves garlic minced
- 5-10 or more bacon strips, cooked & crumbled
- 1-2 tablespoons Olive oil
- Salt and pepper to taste
- 2 tablespoons butter thinly sliced
Instructions

Preheat oven to 425 F.

Line a baking sheet with greased foil or a non-stick pan liner. Set aside.

Cut up vegetables so that they are close to the same size.(Cut harder vegetables a bit smaller)

Place vegetables in a bowl.

Toss with minced garlic.
-
Toss vegetables lightly with olive oil. ( may need more or less)
-
Add in cooked, crumbled bacon and toss.
-
Spread into an even layer on a large baking sheet.
-
Sprinkle generously with salt and pepper and toss.

Bake for 25 minutes or until the carrots are tender, yet still firm.
-
Remove from oven and add on pats of butter.
-
Sprinkle again with salt if desired.
-
Serve immediately.

This is SOOOOOOOOOOOOOO good. Mom had made a roast the first time she made this recipe but imagine it with chicken or ANYTHING…….just plain tasty. We hope you will try this one – roasted vegetables get a bit of “sweetness” to them and with the bacon it’s sweet AND salty. Nice combo!
I must clean up the kitchen – the staff is having a day off – we like to keep the staff happy here in Castle Baconia……………..it PAYS to be nice!!
I was a bit peckish, so I followed my nose!
The bipeds are having roasted vegetables later – what a coincidence!

Never thought of adding bacon to the roasted veggies, what a great way to get picky eaters to down some stuff that’s actually good for them.

Absolutely….roasted veggies are so delish anyway – even kids who HATE vegetables usually will eat roasted ones – putting some bacon in the mix is like icing on the cake! 🙂

Sounds delicious, I will leave out the bell peppers. SSNS picks bell peppers out of everything. We enjoy roasted vegetables often, usually with a couple of pork chops thrown in. Good Morning!

Oh pork chops are my fave with roasted veg and I have “issues” with bell peppers frequently too but if they are cooked well that “issue” is rare. HAHAHAHA GOOD MORNING FLORIDAAAAAAAAAAADOOOOOOOOOOODEEEE!!!!!!!!

That sounds very tasty! I do something very similar but with Mediterranean vegetables, courgettes, aubergines and sweet peppers as well as the garlic and sweet potatoes, but of course no bacon.

That sounds great and in fact just about any combination of veg works with oven roasting doesn’t it……..you’re right though for you NO BACON ALLOWED!! 🙂

It would be JUST as good without potatoes……AND in fact any oven roasted vegetables no matter what they are, work in this – just prepare your faves and cook the same way!!

Mom would have to leave out the peppers, but this looks very easy and sounds yummy. Bet other veggies could be added as well, like cauliflower or Brussel sprouts. That’s the thing about roasted veg (Mom says) – you can use almost ANYTHING – your favorites – with some bacon of course and that crusty bread!
