Bakin’ With Bacon and the King

HAHA – seriously – we’re gathered together to try out another yummy recipe that has bacon in it but other good stuff as well.    Don’t know about you but my Mom and Dad LOVE a good sandwich so this is dedicated to my parents!     BLTs are their favorite sandwich EVER but this is egg salad with all the BLT stuff added in.    What a combo huh?    Well let’s see how it looks and tastes after we’ve made it shall we?????


BLT Egg Salad Sandwich

Ingredients (this is for SIX sandwiches)


  1. Place eggs in a large pot and cover with an inch of water. Bring to a boil over medium-high heat, cover, and remove from heat. Let sit for 10 minutes. Drain and run under cold water to stop the cooking. Peel the eggs and chop.
  2. Combine eggs with mayonnaise, Cheddar cheese, green onions, mustard, and pepper in a large bowl. Stir gently until evenly mixed. Fold in bacon and tomatoes.
  3. Layer egg salad and lettuce between 2 slices of bread to make each sandwich


OH MY GOODNESS…………….this really is delish.   Mom and Dad are going to be having this very soon.    If it’s good enough for the ROYAL MOM AND DAD I’d say it might be good enough for your KINGDOM (or QUEENDOM) too!

  1. I adore egg mayonnaise sandwiches, they are my favourite. I could eat it until the cows come home, or maybe that should be the chickens. I make my egg mayo basically the same way as you and now you have made me want to have it today!!

  2. Jumpin’ catfish Teddy that is one delish looking sammich.
    Here I thought a regular burger with tons of ketchup (I could eat a bottle) which is at least a 2 napkin meal was messy; however, I say this one is a 10 napkin meal.
    I predict Dad of Angel Madi will be eating a BLT at Seaboard today…he likes red bliss ‘tater salad with it but on the side3

    • It might be but then again this photo shows TOO MUCH on the bread if you ask me. You could eat it with a spoon!!! Mom doesn’t like a big fat sammmmich because it is a mess to eat – but she loves this mixture with the eggs AND bacon……..!!!!

      Bliss tater salad is absolutely delicious !


  3. This sounds DELICIOUS and we just happen to have cooked bacon, yesterday! I don’t know why I never thought of mixing ham or bacon into an egg sandwich…… For years, I’ve been doing a tuna/egg mix – 2 boiled eggs with one small can of tuna + jalapeno-mustard and a dab of avocado mayo on brown work bread bread.

  4. Yummy 😋 We’ll save it for spring though. It’s chili weather here. We were getting snow and it’s so pretty but cold 🥶 outside. Soon paw 🐾 prints will be all over. The Golden’s love the snow ⛄️ Actually it’s still snowing. We’re watching Amelia, our great granddaughter Sunday till Wednesday. Hope the snow doesn’t change their plans.


  5. The meme at the end made Mom giggle. She says to her this seems like a stand alone meal without the bread or bun. Looks like everything would be constantly spilling out, but we are sure it would be yummy either way. Mom likes her BLTs with A, as in avocado!   6. We don’t eat ordinary buns/bread anymore, but Mmmm, that would be great as a dish unto itself…eaten with a spoon…YUM!

    I made a Mango salsa today…and didn’t have a jalapeno on hand…so I put in two tsp of red pepper flakes…Ooops, should have used only one. But Hubby loved it…the menfolk here love the hot stuff. I bet that your recipe would be delish with some heat added…not for me, just the menfolk…MOL!
