Sunday Selfie Hop

It’s Sunday and time to Hop with Kitties Blue again………………………..the day of the week we join in their Hop and show ourselves off with selfies!    If you click their badge you will go there and you can sign up and do the same – smile pretty for the camera!

I’ve got a DIFFERENT selfie for you today…………….it’s not ME – it’s my Cousin Casey!     Casey lives with my Auntie Carol (my Mom’s sister) and Mom visited with Auntie Carol Wednesday and of course HAD to take a few photos.    Do you get the idea from this photo of Casey that he enjoys having his photo taken?    Poses pretty well doesn’t he?!     Casey is an Imperial Shih-Tzu……smaller than the regular sized Shih-Tzu and has a distinctive “liver” coloring meaning brown nose, lips and eyes instead of the usual black.    My Mom thinks he’s kinda cute – know what?  I do too – and I’m a WHOLE LOT BIGGER THAN HE IS!   TEE HEEEEEEEEE

Smile for Mom’s camera Casey……………..

Casey is a very cool pup – he is a “dog of many colors” as my Mom says.   He has a different color coat almost every time Mom sees him!    I can give you some examples:

Pretty fun isn’t it?   I think Casey might be magic or something.    Anyway, I decided he could be the SELFIE GUY for us this Sunday.     Mom even made a fancy picture of him with Lunapic AND of course a puzzle for you puzzle peeps!

Mom used the “CONNECTIONS” art filter on Lunapic for this one………I like it – looks somehow a little oriental maybe?

Here’s the puzzle of the above photo – good luck – might be a bit of a toughie………………………still, a fun way to spend a Sunday afternoon right?    See you next week for another Selfie – probably of ME ME ME!

Summer’s sister Binga at SPARKLECAT went to the Bridge last night.  She had a long and happy life with Miss Janiss and we are very sad to see her go.   If you click the badge above, you can visit SPARKLECAT and leave a note for Summer, Boodie and Miss Janiss.

On a happier note, today is our little buddy Sawyer’s SECOND birthday!   Sawyer’s had  rough time of it with his seizure disorder so if you stop by (click his birthday card) to wish him a happy day I think he’s REALLY appreciate it!

Bakin’ With The King

Happy Saturday to all Baconians!

It’s me again………..the King of Baconia who every Saturday, takes over the kitchen from the regular Castle Chef for a morning of baking something delicious that involves BACON!    Our Chef here att he Castle really doesn’t mind……..he looks cranky but he isn’t – right Francoise??

My King, it is my pleasure to turn zee keechen over to your Royal self so I may have zee break !!

Good – I will let you know when I’ve cleaned up the kitchen with help from the Castle Cleaning Crew and you may re-inhabit your domain!

I’ll do trash removal!

I’ll do vacuuming!

I’ll do dishes!

I’ll do windows!

I’ll clean countertops!

I’ll snoopervise!

So what will I be cooking for you today?

The PERFECT BLT

WHAT???????????????   But we ALL know how to make one of those you say…………..that may be true, but there are a couple of extra touches that make it even more delish – just a simple BLT or add some extras if you like……………. you’ll agree with me – I bet you will!

INGREDIENTS:

6 pieces thick-cut bacon

  • 8 slices good bread
  • About 4 tablespoons mayonnaise (I use Hellmann’s)
  • Nonstick cooking spray
  • 1 large perfectly ripe tomato, cut into 4 generous slices, or 2 plum tomatoes, cut into 4 lengthwise slices each
  • Kosher or coarse salt and freshly ground black pepper
  • Romaine or iceberg lettuce, about 8 sandwich-size pieces

 

1. You can either bake your bacon (add 4 to 6 extra minutes to the cooking time), or you can heat a skillet over medium heat and cook the bacon for about 6 to 8 minutes, turning it every few minutes until it is nicely crisp, but still pliable. Remove the bacon to paper towels to drain, then cut each slice in half crosswise.
2. Spread about 1 teaspoon of mayonnaise on 1 side of each piece of bread. Spray a large skillet with nonstick cooking spray and heat over medium heat. In the skillet, place as many slices of bread that will fit, mayo side down, and griddle them up until the mayo side of the bread is nicely browned, about 1 minute. Remove the bread from the skillet, let rest browned side up, and griddle up any remaining slices.
3. Place 4 of the slices of toast browned side down on a cutting board. Place a tomato on each piece, season lightly with salt and pepper, place 3 half slices of bacon on each slice of tomato, and top with a couple of pieces of lettuce. Generously spread the rest of the mayo on the non-browned side of the remaining slices of bread, and top the sandwiches with them browned side up. You now have a perfect BLT.

 

Now, remember I said you could jazz this up with some “details”?    Check these out:

• Swap out the plain lettuce for arugula, spinach, or watercress
• Swap out the bacon for pancetta (but bacon is best!)
• Add grilled or caramelized onions or a thin slice of raw onion
• Add a fried egg
• Add a slice of avocado or guacamole, or make a quick guac-ish mash smash up some avocado with lime juice and maybe some minced scallion or minced cilantro
• Mix the mayo with some smoked paprika, hot pepper sauce, minced fresh basil, cilantro, or another fresh herb or your choice
• Add a sautéed thin chicken cutlet (when I say THIN I mean THIN)
• When you’re browning the bread, you could add a slice or a smear of cheese on half the slices (on the top as you brown the bottom – any cheese, such as cheddar, Monterey jack, brie, or goat cheese. Cover the pan for 1 to 2 minutes until the cheese melts slightly, and then assemble the BLTs (lightly mayo the non-browned side of the remaining 4 slices of bread).

My Mom’s favorite addition is avocado………..of course not everyone is in love with avocado like she is but try one of  the other optional goodies………….Adding the fried egg makes it a perfect breakfast sandwich for instance!

See?   The wonderful BLT is just plain delicious no matter how you slice it (hahahahaha – I made a joke!).     Trust me……..

Remember the BLT!    The original bacon treat!

Happy Friday!   Time to complete some sentences that have holes left in them on purpose by our co-hosts with an eye towards divulging a little bit of ourselves so you know us better!   Sneaky huh?!   Well, mostly it’s just fun to do and if you’d like to join in, click the badge above which links to 15AndMeowing and link up!!!

We get two sentences from each of our co-hosts and each week my Mom and I kind of trade off who gets to fill-in……………………Mom’s in charge this week and her words are in RED.

1. Summer is a good time to stay inside (it’s so hot and humid and buggy outside!).

2. The most recent person  that I talked on the phone with was my sister – we talked about what a nice visit we had for her 81st birthday on Wednesday!.
3. I thought I would grow out of wanting to live happily ever after, but I haven’t.
4. I feel annoyed when people ask me why I don’t color my hair (it’s a mousy brown with the occasional gray hair – big deal – I’m sorry if it’s boring!!).
Thanks Mom…………..Did you say MOUSIE brown hair?    I think MOUSIE brown is a GREAT color!!!!!!!

No I’m not a throw rug Mom…………….step OVER the kitty and not on him please!

Thankful and Poetic Thursday

Thursday is here – are you?   Time for us to share our thankfuls with Brian.   You can too – just click the badge above and whammo – you just link up and you’re IN!     We’ll also be reading Angel Sammy’s poem for the week after we share our thankfuls so stay tuned.

I have a BIG thankful today – I’m thankful that my little buddy from Kitties Blue  – Sawyer – is OK after having had a really BAD seizure.    Most of Sawyer’s seizures stop on their own but this one wouldn’t stop so his Mom and Dad rushed him to the vet and they were able to stop it and Sawyer stayed overnight so they could keep a close eye on him.    He got to come home the next day and they might have to adjust his seizure meds, but THANKFULLY it seems he suffered no ill effects.   Sort of a miracle really……seizure disorders are frightening for sure.    Thanks to everyone who sent him POTP and kept him in your prayers.   I am SURE it helped!!!

Now for Angel Sammy’s email which I received overnight and will share with you.    Every week he writes a poem based on a photo he’s given us as inspiration and everyone who wants to write a poem as well, SHARES them.   We love reading your poems – let us know if you wrote one this week and if you didn’t – give it a try next week – Sammy has a NEW photo for us for poetry day next week.

Copycatting Moms can be so much fun!

 

Maybe not an actual copycat – but copypenguin just was too long a word.   HAHAHA     Someone said rightly so that this pose in the photo someone captured looks just like that scene from the movie Titanic at the bow of the ship.   It does……….and it has the same FEEL to it – freedom and the feeling of flight right here on the ground……………I realize this was a total coincidence when the photographer captured this particular photo but what a PRECIOUS scene this is.     Did you see something else?   Did it inspire you to write a poem?   GOOD!   Share it with us.

Time To Tell All

We’re here to tell it all!

Good job yesterday students………………..not only did we have THREE First Commenters right off the bat but we had a RIGHT GUESS very quickly.    Our Graphics Department thought they would be pulling a “FAST ONE” on you all with something that might fool everyone but did it?   NO IT DID NOT!

Let’s start at the beginning though – who were our THREE First Commenters??

I was one of THREE First Commenters on the Teaser of June 25, 2019 – YAY FOR US!

I was here early but I didn’t comment – I was busy practicing my smile in the mirror in the litterbox room…..

Then we waited just a few more minutes and there it was – the FIRST RIGHT GUESSER…………………..wanna know who it was???????    It was one of our FIRST COMMENTERS!

Da Phenny and Da Nellie and Da Mom, were the FIRST RIGHT GUESSERS and one of the FIRST COMMENTERS on the Teaser of June 25, 2019 – WOO HOO!!

That’s right – everyone in Phenny’s house figured the photo out first!   Want to know what the story of the photo is?????

The Graphics Department thought you all would be fooled into trying to figure out WHERE in Europe this castle is…………………..when in fact it isn’t in Europe at ALL and it’s barely a castle – it’s sort of a “fake” and has quite a tale to tell……………………this is Bannerman’s Castle located in the Hudson River Valley – Fishkill, New York, USA.     If you CLICK HERE you can find out the history of this place which has a VERY “checkered” past !!

Gosh – I studied hard but didn’t see any clues! Pooey!
