My Selfie is a FLASHBACK Selfie……………………from about this same time last year……………

This one was March 31, 2018.    Surprise – surprise – I’m asleep.   Belly up of course.   Some stuff just never changes does it?!    I’ve actually got a LOT of photos of me on this same quilt, in this same position, snoring just as loudly as I was on this occasion.    What can I say???    If it feels good – do it!

Yep – we have a puzzle of this one for those of you brave enough to want a puzzle on a Sunday………………good luck!!!

Oh –  before I go – I looked back TWO years ago at photos of me – are you ready?   I look like I’m about HALF the size I am now…………although it’s probably a whole lot LESS.   I probably weighed about 10 lbs. in these photos and had only lived here a little less than two months!

From March 31, 2017  – already a nap expert – a belly up fan – and learning the joys of sinks!!

Bakin’ With The King on Saturday

WELCOME TO THE CASTLE KITCHEN!!!   Time to get cookin’ with bacon!

For years now The Royal Mom has seen recipes for “bacon jam” and thought “ICK” – you’ve got to be kidding.    Well, she USED to think that, but no longer does.    She finally let me make some for her and now – well – it’s her favorite burger topping!     So I thought I’d share the recipe with you – it’s definitely worth the trouble to make (which really isn’t much trouble!) and it’s EVER SO YUMMY.

BACON JAM

Ingredients

• 1 pound thick sliced bacon, cut into 1-inch pieces (see Recipe Note)
• 1 large yellow onion, diced small
• 2 cloves garlic, peeled and smashed
• 1/3 cup balsamic vinegar
• 1/3 cup packed brown sugar, packed

Method

1 Cook the bacon: In a large skillet over medium heat, cook the bacon in two batches so as not to crowd the pan. (If your pan is large enough, it’s fine to cook all the bacon at once.)

Stir occasionally, until the fat is rendered and the bacon is browned, but not burned or overly crispy. Scoop out the first batch of cooked bacon with a slotted spoon, and drain it on a paper towel-lined plate. Cook the remaining batch.

This should take about 25 to 30 minutes total for both batches.

2 Cook the onions and garlic: Drain all but 2 tablespoons of fat from the pan. You can eyeball it. Add all the bacon back to the skillet.

Add the onion and garlic to the skillet and cook until the onions are translucent, about 6 minutes.

 Reduce the jam: Add the vinegar and brown sugar to the skillet, and bring to a boil. Cook stirring and scraping up browned bits from the skillet for 2 minutes

Reduce the heat to medium low, and simmer uncovered, stirring occasionally, until the liquid turns syrupy and almost completely evaporates—this should take about 30 minutes.

4 Store and reheat if needed: Use immediately, or spoon it into an airtight jar and refrigerate for up to four weeks. Serve warm.

To reheat, zap it in the microwave for about 45 seconds or warm it in a small saucepan on the stove over medium heat, stirring occasionally until heated through, about 10 minutes.

 

Yep – that’s what The Royal Mom said when she tried some……….good on crackers, ESPECIALLY good on burgers, good with all sorts of things and it might sound like a pain in the neck to make but really – isn’t just about EVERYTHING a pain in the neck unless you are excited to make it?    If you love bacon – GO FOR IT.

Yep – and plenty of it!

Not in our castle……leftover bacon simply does not exist!

Give this a try – I promise you will love it.   If my ROYAL MUM can be happy with it, well – anyone can!

Friendly Friday Fill-Ins

1. I am allergic to NOTHING – I am lucky I guess!.

2. My taxes worked out pretty well this year – we owed $78.00.

3. I don’t tell many people what I weigh – if I did people might recommend this or that diet and I am not a DIETER!.

4. When it rains, I like to sit on my front porch and listen to the rain on the trees.

Thankful and Thoroughly Poetic Thursday

Greetings and Happy Thursday.    Time for us to gather together courtesy of Brian and his Hop to share what we are thankful for this week.   I must say that I am continuing to be thankful that we have had decent weather for Early Spring.   I believe (and I hope) that snow is behind us now and we won’t have to worry about that again.   We’ve had a lot of very cold days and some chilly rains but no snow or ice.   Mom and Dad are happy about the weather too.   They spent a lot of money last Fall on lawn renovation for our front yard and by golly we have a GORGEOUS GREEN lawn now whereas almost everyone else has a BROWN one!

I’m also of course very grateful that Sammy’s poetic Thursday email came on time so I can share that with you!

Greetings Poetry Friends!

We’re off and running on another Thursday poetry session.    I hope you are joining in the fun.    Every week as you know I give you a photograph to think about – and you have a whole week to write a poem based on that photo…….what do YOU see in it and how does it make YOU feel?     I not only have fun finding photos for all of us to use as inspiration but I have TONS of fun reading what you have written.    So let’s share shall we?   

Here’s the photo I gave you last Thursday followed by my poem which I’m sharing with you.    Then it’s YOUR turn – how did you do? 

“I Wonder”

In its’ day did it look this lonely?

As schoolhouses went, was it the only?

Did it serve as church as well as school?

Was the good book taught and the golden rule?

Did people come from miles around?

Did the bell ring loudly – a familiar sound?

Did the fireplace keep everyone warm and dry?

As snow, sleet, and rain fell from a darkened sky?

In its’ day was it in the middle of a town?

With wooden houses and gardens all around?

Or did it live its’ life in this quiet place?

Surrounded by crops or nothing but empty space?

Regardless of the answers it has withstood time…….

And became the subject of my simple rhyme……..

 

As I study the photo I come to believe more and more that it may be an old church primarily……the long narrow front windows look more church-like than school-like.    Whatever it was in its’ long ago life, it still stands testament to whatever its’ purpose was………worship or learning or both, it maintains watch as time passes.

Ready to see what I have picked for us all to use as next week’s poetic inspiration?    Looks like it will be fun to “interpret” !!!

Let’s see what we can do with this one…………..looks like trouble is brewing before the first course even arrives!   HAHAHA    

Hope you all have a fantastic week……………….things are great for we Angels – we’re working hard to get the weather right – seems like it’s all a matter of fine tuning – hope our efforts are paying off for at least SOME of you!    Teddy reports progress where he is but I know others are getting storms and difficult weather.   It’s an amazing balancing act that’s for sure.

Teaser Tell All Class In Session!

It’s Time for us to TELL ALL!

Yesterday’s Teaser was a goodie wasn’t it…………………and we really kind of thought we’d fool everyone!   Did we?   Nope!!!    You’ll find out the details in a bit……………..

It was a very tough Teaser…….but this spot is in Pathos, Cyprus, and as Michelle says in the video, the rock is known as the ROCK OF APHRODITE………….Timmy’s Dad was researching Greek Gods and happened to have seen this rock formation so that’s how he guessed it so easily.   YAY FOR TIMMY’S DAD!
