Saturday Greetings from the Castle ! Shakin’ the pots and pans in the kitchen am I !!
That’s what I do on Saturday morning – give our Castle Baconia Chef the day off and I whip up something special involving BACON for all of you………………….are you ready? Have your pencil and paper ready? If you are a bacon-maniac then you will make sure and try this one. It’s got all the stuff to make a bacon lover (or just plain FOOD lover!) smile.
Bacon Chicken and Dumplings
Ingredients:
3 slices bacon (I use five slices but that’s just me – you can use as much as you want!)
3 large potatoes, peeled and diced
1 onion, diced
4 skinless, boneless chicken breast halves – diced
3 cups chicken broth
1 teaspoon poultry seasoning
salt and pepper to taste
1 (15.25 ounce) can whole kernel corn, drained and rinsed
3 cups half-and-half (or light cream would also work)
1 1/2 cups biscuit mix (I use Bisquick myself!)
1 cup milk
Directions:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside; reserve bacon drippings in skillet.
- Add potatoes, onion and chicken to bacon drippings and cook for 15 minutes, stirring occasionally. Pour in chicken broth; season with poultry seasoning, salt and pepper. Stir in corn, and simmer all together for 15 minutes.
- Pour in half-and-half and bring to a boil; add crumbled bacon. In a medium bowl, combine biscuit mix with milk and mix well (dough should be thick). Drop tablespoon sizes of dough into boiling mixture; reduce heat and simmer for 10 minutes uncovered, then another 10 minutes covered. (Note: Do not stir while simmering, or dumplings will break apart). Serve hot.
Are you salivating yet? This is a doozy and really not a lot of trouble to make either!
Yep that’s what it is – YUMMY. It’s great comfort food too. Nothing wrong with eating comfort food – we do that a lot around the Castle. The more comfortable the better.

I am making chicken and mushroom stew for tonight (no bacon though). British dumplings are different to yours as we use suet in them. Ivor doesn’t like dumplings though but that could be because of my first attempt to make them soon after we were married.
I rolled them into balls the size they come out when cooked not realising they rise so much as they cook. When I went to serve the stew it was one mass of dumplings that had absorbed all of the gravy! Ivor told me then that he didn’t particularly like dumplings anyway so I never made them again.

HAHAHA…….I have dumpling disasters from time to time…..Bisquick is a reliable mix but sometimes what they’re IN kind of takes over and turns them into sponges. Chicken and mushroom stew sounds delish!

King Teddy, you find THE best recipes! That one is mouthwatering!!! Now dumplings, Mom is like Eric and Flynn’s dad. She doesn’t care for them as when her mom made them hundreds of years ago, she and the rest of the family (who loved them) were expected to eat what was in the plate. Mom disliked them. Never did get a taste for them. But this sure sounds like something she would eat according to her!

Mom makes small “bisquick blobs” (as she calls them!) and they don’t take over the plate and they are light and not like hockey pucks. My Mom’s Mom made hockey pucks!!! The recipe is just as yummy without dumplings but they do help “sop up” the liquids!! LOL

King Teddy, if we’re cooking/baking with cream, I’m afraid we need to lock Purrseidon and Katsu on the catio…. they are very insulted by this, but a bit mollified when allowed to lick the bowl/s.

Teddy, our mom says that her mom used to make chicken and dumplings, and it was nothing like this. She hated the gluey-tasting dumplings and just about everything else about it. It definitely didn’t have any bacon or cream/half and half. Looks like this would be delicious. Thanks for sharing.
