Bakin’ With Bacon In Baconia

Greetings from the kitchen at the Castle Baconia…..I am your King – and I have taken over the kitchen for another Saturday Bacon Delight Recipe!

Yes I intend to continue sharing bacon deliciousness in this new year and as we all know, there are plenty of recipes to go around for years to come.    Some of the recipes I bring to you are oldies but goodies and some SOUND crazy but they are always yummy.   This week’s is a “staple” around our house…………!!

Bean With Bacon Soup (yes….a classic!)

 

INGREDIENTS:

1 (16 ounce) package dried navy beans

  • 9 cups water
  • 1 pound bacon
  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 4 teaspoons chicken bouillon

 

DIRECTIONS:

  1. Boil the beans in 9 cups of the water and then let sit for one hour. Drain and set aside.
  2. Cook the bacon to your desired texture (it can be soft or crisp, whatever you prefer) and drain except for 1/4 cup grease. Coarsely chop the bacon.
  3. Add the onions and celery to the reserved grease and bacon and saute until soft, do not drain. Add the chicken base or cubes, 4 cups water, beans, bay leaf, salt, pepper, and cloves, and simmer for 2 hours.
  4. Stir in the tomatoes with their juice. Serve.

 

You better believe it.    Dad starts a big old fire in the morning in the fireplace – Mom starts the soup pot going with all these delicious aromas wafting through the house and I, King Teddy, get my little bit of bacon to chew on all day if I like because – after all – I am the KING!!!!!

  1. I have never heard of navy beans. In the recipe they do look like the baked beans in tomato sauce we get here (good on toast for a snack). I think those are haricot beans, so maybe that is two different names for the same bean.

    • Hmm….I’m not sure about the dual name for the same bean but it’s possible – like a lot of things around the world that are the SAME but have different names. We quite often make navy bean soup – sometimes with ham vs. bacon but it’s all just DELICIOUS. We get our bags of beans from the local farmer’s market. We do love baked beans too – lovely to have as a side dish with hot dogs or burgers when we have a cookout!!!

    • Well Bean with Bacon soup was something my Mom made a LOT…….then after she quit making homemade, Campbells had Bean With Bacon soup but for some reason either they quit making it or our grocery quit carrying it – so I’m now making my own. It’s better than Campbells by MILES! LOL

  2. This showed up at the bestest time! We have a cold front pushing through that is going to make it feel like late fall here in this humid place and bean with bacon soup will be for dinner tomorrow night! I think I’d have to have some homemade bread with buttah for dippin’! HAPPY… HAPPY… HAPPY!

    • Oh golly that sounds PERFECT – homemade bread with buttah for dippin’ ???? HEAVENLY. Bean and bacon soup is one of those classics that’s kind of easy to forget – people have become so fancy with soups and this has been around for – like – FOREVER! We have a cold windy day coming here too…..COLD there and COLD here are two different things though!! LOL

  3. Teddy! Mommy just finished her 2 eggs and I had my breakfast too, but I will tell you this TRULY and REALLY started her mouth to watering. I know this has to be outstanding! Mommy said she WILL try it.

    • No we don’t soak them. Mom makes the whole lot in the crockpot and the beans get tender as can be – she has a big soup pot that she used to use for soups but the crockpot is even BETTER!! Mom does wash the beans though (rinse in colander).

  4. Mom loves soup, especially in the winter, but not the canned stuff – real homemade soup. This sounds like it fits the bill just fine. Thanks for sharing. And maybe we can get some of the bacon.

    • Same here with soup. My Mom prefers to make her own – most canned soup is icky although Progresso does make some good ones for “emergency soup needs” (!!). This bean with bacon is really wonderful AND with a whole pound of bacon in it, SURELY there’s some for the WOOs to share???!!
